Quinoa and Black Beans

LOVE this! i usually make this with couscous, but had some quinoa on hand. i added chicken to bump up the protein and a splash of lime juice. I left out the cilantro since i think it tastes like soap. super dish!

why, oh why did i try these? oh my word. one word to describe these -- SINFUL! the only sub i made was to use a triple chocolate cake mix. thanks LTH for a super delicicous, super fun cupcake!

Tomato-Cream Sauce for Pasta

this was easy and fabulous! best of all i got to use my fresh basil and oregano that i have been growing. i used 2% evaporated milk in place of the heavy cream, blended it with an immersion blender and added a touch of cornstarch to thicken it up. super delish.

so easy and very soft. i added 4 tablespoons of vital gluten to the dry mix. i rolled into 3 balls and placed 3 per cupcake tin to have pull apart rolls. will make again!

super delicious. i used 24 oz of low sodium chicken broth in place of 24 ounces of the water. i simmered the bone and onions for one hour, added the veggies and split peas and simmered another 35 minutes. perfect!

Butternut Squash Soup II

excellent! i baked a whole squash and a sweet potato in the oven at 375 for 1 hour. i opted to use celery seed instead of actual celery, omitted the butter and only used the one sweet potato. i also added a dash of nutmeg and cinnamon. very easy to make and good for you!
