Chicken Asparagus Roll-Ups

Chewy Granola Bars

Soft Chocolate Cookies

A perfect chewy chocolate cookie. I added semisweet chocolate chips to the batter and opted not to sprinkle powdered sugar on top once done. I did not refrigerate the dough. I did baked on parchment paper which yielded a perfectly puffed cookie.

Shredded Chicken Tacos

I used boneless skinless chicken breasts and regular chili powder. I used flour tortillas since that is what I had but I would have preferred corn. It has a nice flavor with just enough heat to it.

Best Marinara Sauce Yet

This IS the perfect marinara sauce. I used petite diced tomatoes instead of the stewed, decreased the olive oil to 2 T. and added 1 T. of brown sugar. I blended this with an immersion blender because I hate cleaning my regular blender and it worked just fine. I simmered with cooked Meatball Nirvana meatballs for 1.5 hours and served over hot capellini. I ended up freezing some of this for a quick weekday meal also. Thanks for the wonderful recipe.

Meatball Nirvana

Finally got around to making these. YUM! I went LTH style and used dried onions instead of fresh, cut back the red pepper a tad and omitted the hot pepper sauce, 'cuz I'm a little sensitive to spicy stuff. I was very pleased with the texture and taste. I made this along with Best Marinara Sauce and served over hot capellini. Thanks for a great meatball recipe, LTH.

Turkey and Quinoa Meatloaf

Texture and taste was really good. I baked it in a 9X5 inch loaf pan and the pieces fell apart a little when I went to lift them out of the pan. I didn't want the heat so I subbed ketchup for the hot sauce. quite pleased with the addition of quinoa.

White Bean 'n' Ham Soup

Two Ingredient Pumpkin Cake

I did add 6 tablespoons of egg whites and 1/3 cup of water as per the instructions on the Libby website. I made them into 18 muffins baked for 19 minutes. Healthy but a treat.

Peanut Butter Cup Cookies

YUM! Easy and cute. I froze the PB cups so they would be easier to handle and then once baked I put the muffin tin in the fridge until cool enough to pop the cookies out. Will be on our regular cookie rotation!

Slow Cooker Turkey Breast

Loved this!!! Made as directed with a 6 lb turkey breast. I have a smaller slow cooker so the lid would not fit. I covered it instead with aluminum foil and a kitchen towel and it worked perfectly. This will definitely be on our regular rotation.

Buffalo Chicken Burgers with Blue Cheese Dressing

Since ground chicken is so expensive I made my own by thawing 4 BLSL chicken breasts and cutting them into 1 inch cubes. I added a handful of the chicken cubes to the food processor and hit the chop button for about 5 seconds or so, scooped out the ground chicken into a bowl and continued until I had all the chicken ground. Be careful not to grind too long as you can easily ruin the chicken. I then proceeded with the recipe and it yielded 4 patties. Easy recipe and would be great to make ahead and freeze. Thanks for sharing.

Milky Way® Cupcake Icing

Couldn't stop myself from licking the spoon! Milky Ways are my favorite candy bar so I was excited to try this. Made this to top Marianne's Sweet Vanilla Cupcakes and it was perfect. I let the icing cool a bit before I spread it on the cupcakes with a knife. Very tasty.

YUM! What a moist, simple, delicious cupcake. I have been looking for a white cupcake that does not taste like eggs as I feel most white cake recipes I have tried do. This is perfect and will be my go to white cupcake recipe from now on. Thanks for sharing Marianne!
