About this Cook
A little about us. We are married over 26 years. Connie does the daily cooking - grew up in 4H in Amish country Ohio - great fundamentals and cooking sense. Andy took gourmet cooking in High School and several other classes since - he has no common sense but alot of creativity and able to try anything - the risk taker.
My favorite things to cook
Connie: crock pot dishes, "minnie" chicken (her grandma's recipe), baking, vegetarian. Andy: Thai, Indian, Mexican and country french.
My cooking tragedies
Andy: made a cranberry relish from a recipe in a Better Homes and Gardens cookbook - for Xmas for family. Recipe should have said apple cider not apple cider vinegar - lots of puckering that night.

Grandma's Hash Browns
The key to this is the same to good mashed potatoes - the refridgeration. Shirley Corriher in Cookwise explains why this works. The glutens that make potatoes gooey and sticky, crystalize when chilled and once crystalized - they stay that way which makes for non-gooey hash browns and light fluffy mashers.

George's Greek Fried Chicken
We really enjoyed this - to get the marinade to really work, poke all the pieces well with a fork before marinating. I also let it marinate for about 2 hours - wonderful flavor throughout the meat - not just on surface.

Fried Cabbage II
Needed to use up a half head of cabbage and this was a big hit with my wife. I used red wine vinegar rather than cider; added some thinly sliced apples near end of saute; and used butter instead of bacon. We will do this one again.
