Mango, Peach and Pineapple Salsa

Didn't have pineapple but it was still good. I used to hate cilantro but purposely acquired a taste for it because it is so good for you, so now it didn't seem like that much in this recipe. Used extra garlic and no sugar which might not have been a good thing except health-wise.

Carla hates it, too much ginger - I thought it might be o.k. after adding more fruit (apple in this case) - letting it cure a while to see how it tastes before removing it from recipe box

Warm Plum Sauce

It tasted yummy to me - the balsamic vinegar cuts down on the sharpness. Will use it on tempeh and tofu chops and lentil loaf.

Lentils And Spinach

Surprisingly good considering its simplicity. For me the best part was the onions, which I cooked slowly in 1 teaspoon ghee & olive oil until caramelized with a teaspoon of sugar. I used 1 cup red lentils (which cooked in like 10 to 15 minutes)and I only used water, no broth, 2 cups. Next time I want to try broth since it would most likely be better yet. Also used fresh spinach added at end and just wilted and served over jasmine rice - enjoyed it very much.

Roasted Sweet Potato Mango Salad

I used sesame oil instead of olive. I'm not sure this would have been more than a four but I added coarsely chopped pistachio nuts to this and that did it. I changed the proportions for two servings, using 1/2 each of an avocado, lemon and a mango and 1/4 c. of cilantro and green onion. Yummy. Thanks for this recipe.

Vietnamese Rice-Noodle Salad

I had half of this as a full meal and loved it (big meal). Only thing I changed was from jalapeno pepper to sriracha sauce (couldn't find the pepper). After I cooked the noodles 4 minutes, I cut them into shorter pieces using kitchen shears, making it easier to mix and eat. Only hard part of making this was julienning the carrots. I need to find a machine that really works for that. The flavor got better and better as I ate so I will let it set and mellow next time (only made half the recipe so don't know how long it can mellow before drying out the noodles.

Strawberry Oatmeal Breakfast Smoothie

I used a frozen banana, strawberries & raspberries, and soy milk yogurt (that I make myself). I just mixed it all in my Oskar food processor a little longer than usual due to the oatmeal, also added a little more sugar (4 teaspoons) although I could have added a little stevia. It was very good and very filling.

Quick Kale and Banana Smoothie

By using soy milk instead of coconut milk, the fat content is reduced to 2.5 grams from 25.6. I used soy milk, a frozen banana, fresh strawberries and a little fresh mint. I enjoyed it.

I liked this a lot. Used 1 teaspoon of coconut oil and browned tempeh for the chicken. Balanced the sweet to hot for my taste, added green pepper and served over quinoa. Nice easy vegan meal.

Kale Mushroom Polenta Pie

Beet Greens and Baby Spinach with Red Kidney Beans

This was just o.k. - I was starving and needed to use the beet greens (along with the beets), but in fairness I am vegan so used coconut "bacon" which probably made a big difference. I think a little sugar as suggested by other reviewers might help also. Thanks for sharing as beet recipes are rather scarce and its very good for us.
