Easy Japanese-Style Vegan Collard Greens
It was, as advertised, quick and easy. But the collards tasted bitter. Maybe it was my batch. I was disappointed.

Cauliflower Soup with Blue Cheese Fritters
When I see Chef John, I know it will be high fat. Since I don't want to look like Chef John, I changed the recipe. I didn't make the fritters, I sauteed the onions, garlic and chopped mushrooms in 1/2 tablespoon of butter and subbed silken tofu for the heavy cream. Much healthier and weight friendly. And it was very good.

Garlic Mashed Potatoes with Eggplant
Good way to hide eggplant since I couldn't really taste it and cut down on fat. I skipped the bacon and the oil.
