Cranberry and Cilantro Quinoa Salad

I made this exactly as written. I thought it was good and my husband completely raved about it. The only reason i gave it 4 instead of 5 stars is that i thought the onion sort of overpowered it. Next time i would reduce this to 1/4 cup just like the peppers.

Red Skinned Potato Salad

I have made this dish several times. The only changes I made were to use green onion instead of regular (always preferred in my house) and to add a little extra bacon (never a problem). I've never made this dish w/o people asking for the recipe. I would recommend making several hours ahead of time so that it has time to chill in the fridge. It gives the ingredients time to meld and it tastes better cold. If I could give this more stars I would.

Chicken Pot Pie IX

Doubled the gravy as others suggested, added potatoes (what's a pot pie w/o them) and used chx broth instead of water to boil the veggies in. Also used already cooked chx instead of raw. Mixed everything together before pouring onto the crust. Will be attempting to make w/o dairy (home-made crust and soy) and will update post after that.

Sam's Famous Carrot Cake

Home Style Macaroni and Cheese

Pretty much followed the recipe as is. The only change i made was to omit the parsley only b/c i didn't have any. If i make again, i will either cut way down on the bread crumbs or omit all together - they made the dish too dry. I may even try french fried onions instead?? My 2 year old and husband both really liked it.

Easy Slow Cooker French Dip

This was a super easy recipe. We followed the recipe to a tee other than the kind of roast we used (we already had one in the freezer). Used individual french loaves that were slightly toasted. Will make again.

Fresh Southern Peach Cobbler

I followed this recipe to a tee - came out perfect! To easily peal the peaches, I cross-hatch the bottom (a plus or X) and then drop into boiling water for about 60 seconds - then immediately drop into cold water. The cross-hatching allows the skin to start the peeling process so you don't have to work that hard at it. Great recipe.

Quick Chicken And Wine

I can see why some people say they don't understand browining the chicken, crisping it, and then just getting it all soggy by soaking it in the wine...but the flavor is still fantastic following the recipe as is. And soaking the chicken really pulls the flavor of the sauce in. I definitely plan on making this recipe again!

Strawberry Angel Food Dessert

So so so great! I made this for a BBQ and it got amazing reviews. I couldn't find strawberry glaze so i made my own (strawberries, frozen blueberries, sugar/splenda mix, and cornstarch over medium heat). I also used fresh strawberries and blueberries. We also used low fat cream cheese - i would love to try using fat free cream cheese and cool whip, plus all splenda instead of sugar - would make a great low fat treat!

Artichoke Spinach Lasagna

This lasagna was great!! I followed other reviewers' suggestions and cut the broth down to 8oz. I also added some oregano b/c i love the flavor and used fresh spinach. When i simmered the onion/garlic/artichoke/spinach mix w/ the broth, i left the lid off the pan to burn off some of the liquid. I used one 24 oz jar of spaghetti sauce and then added one can (15 oz) of tomato sauce. I also did NOT pre-cook the noodles - they turned out perfect. There is plenty of liquid to boil the noodles as the lasagna cooks. I also did not find that there was too much liquid (maybe b/c i reduced the broth). My husband is already asking me to make this lasagna again.

Kickin' Collard Greens

We had never had collards before and thought this recipe was great! We used turkey bacon to cut the fat and left out the oil in the beginning. We also used more bacon since my husband loves the flavor. Other than that - followed the recipe and loved it. We're making this again this week!

Jamie's Cranberry Spinach Salad

This truly is the BEST salad!! I made this for the first time on Thanksgiving for around 34 people - everyone raved about it and i got numerous requests for the recipe. I followed the recipe to a tee with the exception of adding blue cheese. I now eat this salad at least two times a week - it is SO SO SO good!!

Beth's Spicy Oatmeal Raisin Cookies

I have been making this recipe for about 5 years now and it has always been a hit. The changes i have made are to use all butter, add nutmeg, and add choc chips. The choc chips really make it extra extra yummy!

Zucchini Cornbread Casserole

This recipe was a lot more rich than i expected. I followed some reviewers' suggestions and let the zucchini sit w/ a little salt for about an hour and then squeezed the extra water out. I also decided to add shredded carrot in place of half the zucchini - this turned out GREAT! I used sharp cheddar and the flavor complemented the cornbread nicely.

Baked French Fries I

These were SO good - my husband kept going back for more until they were all gone! I followed the recipe with some additions: i added fresh, shopped garlic, garlic salt (in addition to garlic powder), and cayenne pepper. I cut my fries in regular french-fry fashion so i only baked them for 30 minutes (15 each side). These are so so so so good - i can't wait to make them again!

Beet Salad with Goat Cheese

This recipe was really good - i did make a couple of changes though. I sub'd feta cheese for the goat cheese b/c i hate goat cheese and i added some yellow onion. Adding the onion really complemented the sweetness of the recipe well. Overall, a very yummy salad and a GREAT use of beets!!

Brown Sugar Meatloaf

This recipe is GREAT!! We've made it a bunch of times and it just gets better and better - it's great as left-overs too!! We use lean ground turkey instead of beef, cut the sugar in half, reduced the milk by 1/4 cup, and added some Worcestershire in the turkey loaf and the sauce. We will continue to make this recipe.

Salsa Chicken

This recipe was GREAT!!! And SO easy! I marinated the chicken in the taco seasoning and the salsa overnight and it had so much flavor - not overwhelming though - just perfect. We did add the sour cream as others recommended, but i think it would have been great as is too. We paired it with Mexican corn (nothing fancy, just out of the can) and this was just enough balance. Yummy! I will definitely make this again!!

Blackberry and Blueberry Pie

Wonderful pie!!! My husband can't stop eating it. :) I used 2C blue, 2C black, and 2C rasberries. I also added 2T cornstarch since the blackberries and rasberries were frozen. The pie was still just a little bit runny, so i might use another tablespoon of cornstarch next time. And i guarantee, there will be many next times! Yummy!!!!
