Vegetarian Lasagna

I didn't have room in the pan for all of those vegetables. You'll have to dice finely to pack it in!

Quick Black Beans and Rice

I used 30-minute rice which works just a well, but you'll need at leat 1 extra cup of water. It's a meal in a pinch.

Garbanzo Bean Patties

Disappointing recipe give the amount of effort I put in. It was a bit pasty. Serve like burger patties with your favorit burger toppings. I used red pepper walnut past. I froze uncooked patties for a rainy day.

Baba Ghanoush with Yogurt

This recipe was a nice surprise given I don't really like eggplant or yogurt. It's creamy, yummy! I pureed the eggplant for a smoother texture.

Marrakesh Vegetable Curry

Spicy! Very spicy. It is a wonderful combination of vegetables - I love the addition of almonds. It's definitely a curry.

Tortellini Southwest

I thought it was a bit too spicy with the chiles, but then again, I used jalapenos. Also, mozzarella may not be the best choice of cheese because it tends to get chewy once heated. Cheddar or parmesan might be better.

The spinach adds some much needed colour. Try topping with shredded swiss. An excellent recipe for leftovers.

Very salty. I recommend using a lot less soy. But otherwise very tasty. Very easy and quick and ingredients are almost always on hand.

Wild Risotto

This is a very attractive dish. Not exactly quick, but you can't expect that with risotto. The effort is worth it. It could use a little more spice, but then again, I used dried tarragon which is not as flavourful as fresh.

Figs Stuffed with Almonds and Chips

I used Marsala wine and dried figs. Stuffing was enough to fill 26 dried figs. It was easy enough to make a cavity in each dried fig with my index finger. It took me about 15 minutes to stuff all of the figs. The product was little bite-sized morsels, and I have to admit I was somewhat disappointed in the overall taste. I bet fresh figs would be 100 times better. I also recommend serving as soon as they are cool enough to eat.
