Luscious Lemon Snaps

Great recipe and easy to make. I took the advice of others and added only 1/2 C. oil and added more juice in a slow stream until the dough came together. I've also tried with oranges/orange juice and lemon extract substituted for the vanilla and all of those combos work nicely too.

Grain and Nut Whole Wheat Pancakes

Terrific recipe! I made these for brunch and they were a big hit. I also made traditional buttermilk pancakes but these disappeared first. Nobody ever guessed they were full of oats and whole wheat since they were too tasty to be a healthier alternative. The only issue was that they did not bubble like traditional pancakes so I needed to peek underneath in order to know when to flip.

BREAKSTONE'S Simply Citrus Cream Cake

Super-easy and absolutely delicious cake. I took one star off for the runny consistency of the cream/icing. Everyone loved how it tasted but my cake looked very...uh....homemade. My well-drained mandarin oranges slid on the top and the top cake layer shifted and slid on the middle cream layer even after I put the entire cake into the freezer in an attempt to firm-up the cream a bit. I would definitely make this again because of the taste alone but only for very close friends and family.

Buttercream Frosting

Easy recipe that uses on-hand ingredients. I like that it's made with butter instead of shortening too. One less star because I didn't use anywhere near the 8 cups of sugar. I whipped the butter until fluffy then gradually added the vanilla and only 2 cups of powdered sugar. I added one tablespoon of milk and then whipped the daylights out of it which made is fluffier. This made enough to pipe generous amounts onto 2 dozen cupcakes.

J.P.'s Big Daddy Biscuits

I've tried an endless number of biscuit recipes and this is now my Official recipe for biscuits. The original recipe is perfect as-is but I've made some variations (substituted 1 C. AP flour for 1 C. white whole wheat flour or added grated cheese and/or herbs) with great results too. Also, you can make this in a FOOD PROCESSOR: Put all dry ingredients in processor and pulse a few times. Then add small, cut-up chunks of the shortening (sometimes I use cold butter) and pulse until coarse. Add milk a little at a time (you might not need all of it) until the dough pulls away from the sides of the bowl and turns into a ball . Flatten dough with your hands (I skip the rolling pin) and proceed as directed. From start to eat, less than 1/2 hour! Thanks for the recipe!

Pumpkin Black Bean Soup

Great tasting, easy to make soup that tastes even better the next day. As suggested by other reviewers, I used apple cider vinegar in place of the sherry vinegar since I didn't have that on-hand. I made a batch with vegetable broth and without ham and that was great too. The only reason for 4 stars instead of 5 is really superficial: this is the ugliest soup ever. Puréed black beans and pumpkin: you do the math. Fortunately this soup has a really wonderful personality.

Gingerbread Pudding Cake

I'm probably a freak for making this in the summer but I had a huge sweet-tooth ginger craving and making gingersnaps was just too daunting. This is a delicious and easy recipe that hit the spot. I didn't change a thing; I only halved the recipe (but still used 1 egg) and it turned out great. Yummy the next day out of the fridge too. Yay!

Caramel Shortbread

Fantastic!! My sister calls these "Fake Twix bars". I've made this recipe a couple of different ways including the original and every batch got rave reviews. If you do not have ground almonds, you can substitute 1/4 cup additional flour. It's not as tasty but it still turns out delicious. Also, here in the States it might be hard to find Lyle's Golden Syrup so you can substitute light corn syrup if need be. Again, not as good but most everyone won't notice a difference. On another batch I added 1/2 tsp. of salt to the caramel mixture so there's more of a sweet/salty taste to these and they came out terrific. Thanks for the recipe!

Big Soft Ginger Cookies

Excellent recipe and absolutely the best ratio of chewy, spicy, and ginger-y. I will try the recipe again using a bit more flour to make them a bit thicker. I used a cookie scoop and didn't flatten them but they still turned out super thin (still tasted great, though). That's the only reason my rating is 4 stars instead of 5.

Sweet Corn Bread

Easy to make and the best cornbread recipe I've tried (and I've tried several). Original recipe is very moist and not too sweet but I added one can of creamed corn and now it's extra tasty. I've also made these into muffins (baked for 20 minutes) and also corn dog muffins (I added 3-4 chunks of hot dog into each muffin before baking). This recipe always turns out fantastic. Thanks for the recipe!

Hot Fudge Pudding Cake III

Easy and delicious recipe. I served it with vanilla ice cream and it received rave reviews at a dinner party. The top set like cake and the bottom was a gooey, fudgy sauce. I made a couple of changes to make it SUPER FUDGY: I used Hershey's Special Dark unsweetened cocoa for both cocoa measurements and increased the 2 Tbsp. to 3 Tbsp, added 1/2 C. semi-sweet chocolate chips and 1 tsp. vanilla, and used only 1 cup of liquid: strong, freshly brewed coffee. With all the dark chocolate and coffee in here I will probably be awake for days but I don't care; I will definitely make this again. Thanks for sharing the recipe!

Spicy Chicken and Sweet Potato Stew

Fantastic! Super-tasty soup and very easy to make and uses only one pot (I cooked the chicken in my large pot, set the cooked chicken aside and proceeded with the recipe). The cumin, cinnamon and cocoa makes for a freaky-good stew. The most time-consuming/difficult part was chopping some of the ingredients. My tweaks: I used Del Monte diced tomatoes with mild green chilies, replaced the water with chicken stock, and skipped the red pepper flakes. It was mild enough with a nice little kick. The only unsweetened cocoa powder I had was a dark variety so I only used 1/2 tsp. Also, instead of adding the 2T. of water to the flour, I just spooned some of the boiling soup into a separate bowl and used that. This makes a really great meal with bread/chips & salsa.

Pecan Pumpkin Biscuits

These are terrific. Very easy to make and super tasty. These are a unique accompaniment with brunch. They are a bit on the sweet side but the combination of pumpkin with the toasted pecans is fantastic. I toasted chopped pecans at 350°F for 20 minutes before adding to the dough. Thanks for the recipe!

Too Much Chocolate Cake

Fantastic recipe. Really easy to make and came out awesome. It is super, super chocolatey. I frosted with Satiny Chocolate Glaze made with 1/4 tsp. orange extract instead of vanilla and it was a huge hit. This cake hypnotized people at a dinner party.
