Easy Mint Chocolate Chip Ice Cream

This recipe is amazing! It's not overwhelmingly minty- actually it's just right. I only used 1/4 cup of choc chips and that was more than enough. This is better than store bought stuff!

Slow-Cooked Chili

Delicious! This is what chili is supposed to taste like. I was worried that it wouldn't be soup-y enough but in the end turned out to be the right consistency. Instead of the seasonings listed in this recipe, I used Bill Echols Taco Seasoning recipe from this site, as it is my go-to seasoning for everything. I also used 1 can of black beans and 1 can of red beans. Definitely will be making this again!

Slow Cooker Chicken and Dumplings

I was looking forward to trying out this recipe but, to my dismay, I ended up dumping the whole thing. It was all because of the "dumplings". I followed this recipe exactly as written but allowed the biscuits to cook a little bit over an hour, all the while on the high setting. I don't know if it was my expectation of something a bit harder, but the dumplings turned into this slimy, raw-tasting dough. They ruined the whole thing, as the sauce and chicken could have been quite delicious, if not for the dumplings. Perhaps I had different expectations for dumplings, but this just did not seem edible. Very disappointing, especially for having such a terrific rating!

Taco Seasoning I

I will never go back to store-bought taco seasoning again! I often buy ground beef for tacos as ground turkey is so bland, but with this seasoning you can't even tell the difference whether you're eating ground beef or ground turkey. I add this stuff to soups, stews, and pretty much anything I cook in the slow-cooker. The recipe is just about perfect as it is.

Taco Pie

This was so delicious! I substituted ground beef with ground turkey and added 2 cans of refried beans and half a jar of mild salsa that I mixed with the ground turkey. Instead of store bought taco seasoning, I used Bill Echol's Taco Seasoning 1 recipe from this website. It was well worth it. I also omitted the crushed tortilla chips. Definitely a recipe I will be making every so often, as it's quite rich and filling!

Slow Cooker Chicken Taco Soup

I made this recipe with only two minor changes- I couldn't find chili beans so I used red kidney beans, and I used Mexicorn in place of regular corn. The results were spectacular! My fiancee and I devoured this dish and cannot wait to be hungry again so we can have some more. It's very filling. I was worried that it did not come out very chili-like but once I added the sour cream the consistency became thicker. Delicious!

Tarragon Chicken Casserole

This recipe is definitely a keeper! The tarragon sauce is subtle and just right with the pasta. I substituted linguine with egg noodles and topped it off with shredded cheese. My boyfriend had seconds and thirds, and that doesn't happen very often!

Garlic Shrimp Linguine

This one's a winner! I would have given it 5 stars but the recipe for the sauce is all wrong, in regards to the amounts of each ingredient. I put 3 times the amount of butter and white wine, and 5 garlic cloves and also added tomatoes, which gave the sauce more texture. All in all, a very easy and quick dinner idea.

El Grande Borezo Chicken

I used 6 drumsticks instead and marinated them in the ingredients for 5 hours. The chicken came out juicy, slightly sweet and flavorful. The leftover sauce tasted great mixed with rice. The chicken itself has a very subtle taste, so it is not for those who are expecting a ton of flavor.

Lizzy's Creamy Chicken Bake

I made this recipe with 5 chicken breasts. I also used 1/4 to 1/2 the amount of sour cream and only a few tablespoons of onion soup mix and it was salty enough. All in all, an excellent dinner!
