Slow Cooker Chicken Taco Soup
Delicious, hearty soup that warms you from the inside on a cool fall day. You can't beat how easy this is to make. I made this exactly as is (and I often tweak recipes) and both the hubby and I were pleased with the end result. I, personally, am not a beer drinker, but I added the beer as the recipe indicates. I did not notice (nor did my husband) much of a beer flavor. It seems to add an over all rich, background flavor, if anything. I can't wait to make this, again and again.

Balsamic Bruschetta
Delizioso! I didn't have quite enough roma tomatoes, so I made up the difference with grape tomatoes. I also didn't have garlic, so I used garlic powder instead. I served this with toasted garlic-flavored bagel chips and it was a winner. My husband and I finished the whole bowl, just between the two of us (kind of a appetizer lunch). I can't wait to try this again. Next time, I'm thinking of roasting garlic and spreading that on French bread before adding the topping. Definitely a keeper.

Summer Corn Salad
So full of flavor! I used a red onion for color and grape tomatoes for a little extra sweetness. I also subbed balsamic vinegar for white vinegar as that is what I had available. This was such a nice, light, tasty side dish to the hamburgers we had. This will definitely be a part of the rotation for summer cookouts.
