Apple Pie I

Reviewed: Nov. 9, 2008
This was a fantastic pie. I made it with the Basic Flaky Pie Crust recipe found on this site. Make sure to use fresh apples, as when they are too ripe the filling gets runny. Also allow to set after baking. It will retain the structure better.

Chicken Tortilla Soup V

Reviewed: Oct. 23, 2008
This was a delight. Full of flavor, and my Fiance said it was a keeper, since he is my official taste tester! I made a few changes, but I am sure that the original is not far from the changes and it was a wonderful soup. Highly recommend.

Antipasto Salad

Very good. I would go with even less that 1/3 c oil next time. I subbed the veg oil for olive oil. Next time Im adding black olives too.

Chicken Pot Pie IX

Reviewed: Nov. 17, 2008
It was very delicious. I will make agian for sure. I did, however, go by the advice of some of the other cooks. I brushed an egg white on the bottom shell, I added corn, I added about 1/4 teaspoon of garlic powder and some seasoning. I boiled the chicken and veggies in broth instead of water.

Impressive. I did have to substitute because I was not able to find cayenne pepper for the seasoning.. It was wonderful though, it had a nice zing to it and it was a brillant mixture of all sorts of flavors. I will make agian soon.

Crusty Potato Bread

Reviewed: Mar. 8, 2008
This was a very delicious bread. I did change a few things, because I live abroad and can not find some of the items. I also did not use a bread machine. I made the bread with instand yeast as the recipe indicates and I made it as though it was a normal instant yeast bread recipe, where you substitute the first rise for a resting period. I also used all purpose flour and it came out very nicely. It has a light flavor, it is slightly dense, but perfect for sandwiches, it still has a very nice bounce or spring back when touched. The way I described it to my fiance was that it had a deeper flavor, but still light.Meaning, it was very tasteful, but not overwhelming enough to take away from what it is eaten with. It did remind me of the Orowheat Country Potato Bread you can buy at the store actually and that is one of my favorites. I will make agian soon.

Honey Wheat Bread I

Reviewed: Feb. 16, 2008
This was fantastic bread, very soft and did not need anything on it to enjoy its wonderful taste. Too soft for a sandwich bread the first day. If you feel that the dough is too hard or rough to work with it is normal, after the 45 min rise you will see, it gets softer and then agian gets slightly hard after rolling it. But... when it bakes it is very soft. I doubled the yeast. The water inside the oven is necessary. Enjoy!

Amish White Bread

Reviewed: Feb. 12, 2008
I halved the recipe and used instant yeast. It was very good and amazingly fluffy. It went really nice for a quick P&J snack. It wasnt too sweet like others had said, but it did get slightly soggy on the bottom, therefore, I would recommend turning it on its side after removing from the pan and letting air circulate it. The bread was brillant.

Beef and Bean Chimichangas

Reviewed: Apr. 27, 2008
Fantastic! TRy these! I was originally going to make enchiladas, but I decided to go with these instead. Im glad I did. They were very tasty. Here are the changes I made: I did not have beans (canned, or pre-soaked), so I opted out on them...but even without they were moist enough and very good. I also didnt have bell peppers on hand, I just used a green hungarian pepper, and that added enough zing that made up for the missing bells. I got creative and poured the remaining mixture of meat and cheese on top of the wrapped up chimis before they went into the oven, and IM glad I did because it added some extra texture. I made my own taco sauce from scatch instead of a pre-made one, therefore I had more control over the sodium in the dish. I also made my own tortillas from scratch which I would reccommend because it gives a much more authentic taste. Added a dab of sourcream to final product and it was a grand.

Banana Muffins II

Reviewed: Apr. 26, 2007
I loved this recipe. I chose to use very ripe bananas so that they would be sweet enough because I added a cup of walnuts to the recipe that were finely grinded and also chunks. Very yummy and the neighboors loved them too. I have made this as a bread loaf as well, I cooked it for 1 hour and it came out very good.

Award Winning Soft Chocolate Chip Cookies

Reviewed: Apr. 28, 2007
These were fantastic. My fiance loved them. I prefer my cookies a tiny tiny bit sweeter, but I think if you use a sweeter chocolate it would make up for it. I will make agian, many times. No strange after taste like other have said. I cooked mine for 16 min.
