Chesapeake Slaw

I thought this was great!! I'm not a huge fan of traditional cole slaw, so wanted to try this recipe to serve with fish. It's going to be the only slaw I make from now on! I followed the recipe exactly, using rice wine vinegar. Thanks for posting!

Chicken, Rice, and Green Bean Casserole

Very easy to throw together on a week night. I used left over chicken breast, and omitted the mayo altogether. Added about 3/4 cup fat-free sour cream and a little of the liquid from the rice. It was still pretty thick. Also sprinkled some parmesan cheese on top - b/c we LOVE cheese! Next time, I'll add more cheese and some seasoning (salt, pepper, garlic powder?) Needed a little something - maybe b/c I didn't use mayo? My kids wouldn't eat it....but they don't eat anything!

Party Punch III

This is such a simple recipe, yet everyone raves about how good it is. I've made it for the past 2 years for Christmas parties, and will probably start making it for birthday parties as well! Thanks for posting - I need recipes that are easy but good!

Chocolate Eclair Cake

This is sooo good! I use regular reduced-fat graham crackers, and instant sugar-free, fat-free pudding. And either sugar-free or fat-free cool whip - depends on who I making it for. The homemade chocolate sauce is a must!! It's so much better than can frosting. However, I have tried making my frosting with Splenda - and I do NOT recommend that! It was bitter and artificial tasting. (did this for my diabetic husband!) Maybe next time I'll only frost half! Great dessert, and makes a large dish - great for potlucks and family gatherings.

Creamy Apple Crumb Pie

I love this recipe b/c it's a little healthier than many of the other apple pie recipes - obviously it's PIE and not a health food -but it's a better! The only change I made was I used non-fat plain yogurt in the place of the sour cream (b/c that's what I had on hand). It turned out very well!

The sauce has a great flavor! I used Sugar Free Grape Jelly, which sounds odd, but it was very good. I will definitely make this again with other cuts of pork!

Asian Chicken Salad

This made a great salad! I don't care for rice noodles, so just cooked a side of white rice instead and added some fresh grated ginger - it was great! Toasted sesame seeds really add to the wonderful flavor of this salad.

Cake Mix Cookies I

These are good and super simple!! Great for kids to make. I made them with my girls, but substituted applesauce for the oil and used an egg replacement since my son is allergic (1 T. vinegar, 1 T. milk and 1 t. baking powder for each egg - I just used one substitution) These are good right out of the oven - but do not store well - became chewy and super moist on top - probably from all my substitutions!! However, cookies don't usually last more than a day at my house anyway!! Thanks for posting!

Basic Fondue

Tasted good, but I didn't follow other reviewers advice and toss the cheese with flour - and I had a mealy-grit like consistency! (I'm sure it's the cooks fault, not the recipe!) I did sub half the milk for beer and used half sharp cheddar and half a blend of white cheeses (Italian blend maybe?) Will make again, b/c I love fondue!!

Cocktail Meatballs IV

Yummy, simple appetizer that everyone enjoys! I used store-bought frozen meatballs, and a whole jar of chili sauce and a jar of reduced-sugar grape jelly. Next time I will use a half or 3/4ths jar of jelly I think. They were a little sweet to me. Otherwise super easy and good! Threw the heated sauce in the crockpot over the meatballs during a Christmas get-together.

Yellow Squash Casserole

This gets 5 stars because my 5 year old ate it!!! She never eats anything new, or any vegetables (other than French style green beans!) Thank you so much for posting this recipe!! My husband also enjoyed this casserole.

Good 100% Whole Wheat Bread

I thought this was very good. It turned out great in bread machine, with a crispy outer crust and soft center. My family enjoyed the dense consistency, and my kids had no idea it was good for them! I think it would also be good to add some cinnamon!! I also used Splenda instead of sugar.

Valentino's Pizza Crust

This is much better than the recipe I had been using. Next time I will pre-bake my crust (don't have a pizza stone) and divide it b/t 2 pans for a thinner crust. This is like a hand-tossed crust, which is good, but thinner=less calories! I also used 1 c. wheat flour and 1&1/2 white, and decreased the olive oil to 2 T. I used this crust to make the Buffalo Chicken pizza from this site-YUM!

Easy Beer Bread Mix

This is a delicious quick bread. I used garlic powder instead of onion b/c that's what I had on hand and a good quality beer - love it! It tastes great & is so simple!
