Quick and Easy Polenta with Tomato Sauce

This is easy and yummy! I've made this at least 5 times and even messed it up once. Not sure about why it was soupy for other reviewer but you need to cook and mix until it starts to get really thick. When you almost can't stir it anymore (maybe 3-5 minutes) you pour it into a dish, let it sit for about 5 minutes so it firms up more and then put the sauce on top. I use a little less than 2 cups on mine.

German Apple Cake I

Very good. Gets soggy by the next day so I would recommend refridgerating it because then it's like apple bread pudding.

Big Soft Ginger Cookies

You must chill this dough before you can work with it!!!!! Plop it in a big piece of wax paper and try and make a roll out of it as best you can and stick it in the fridge overnight or several hours. Don't add more flour since this affects the quality of the final product! When firmly chilled slice 1/2" thick slices and put on cookie sheet. All molasses doughs are a sticky goey mess unless they are chilled and even then you only have a couple of minutes before they fall apart again.

Old Time Chicken Divan

This is not a hard dish so I don't quite understand that it's "worth the effort". Very tasty and very easy. Steam the broccoli while sauteing the chicken. Then, cut up the broccoli, cut up the chicken and arrange in a cassarole dish. Make the sauce, pour it over the dish and heat through for 20 minutes... and Voila!

Sweet and Crunchy Salad

Very easy and yummy. I added cilantro and chopped snow peas per another reviewers suggestion. I took the drained juice from the mandarins and added to the dressing mix in lieu of sugar. I'm sure it was more liquidy this way but it wasn't bad and I didn't use ALL THAT sugar and made use of the mandarin syrup as well.

Zucchini Soup II

I only pureed the soup so that you could still see the flecks of zucchini and carrot instead of looking like greenish baby food. Very good flavor. Kids liked it too.

Easy, Speedy Corn Muffins

EASY PEASY AND YUMMY!! MADE IN A 9X12 PAN FOR 35 MINUTES. CAME OUT 1/2" THICK. WILL USE AN 8X8 PAN NEXT TIME AND BAKE LONGER.

Strawberry Cake and Frosting I

I guess I'm a beginner at frostings. I never know when the consistency is right when in the bowl. This recipe I had to refrigerate in the middle of frosting the cake because it started to melt. I don't know if it was the two teaspoons of half and half I put in to make the recipe "creamy" according to some suggestions or because I live in Florida and it was 82 degrees in the house. It started off okay with the in between layers but then seemed to "melt" when applying the top coat. Tastes good though.

Raspberry Fudge Balls

I made these for Christmas gifts for the neighbors and again recently for my family. I received compliments from the neighbors who thought I spent a lot of time on them. This time I think I OD'ed on them and will wait some time to make them again! Maybe until Christmas !

Arugula Salad with Citrus Vinaigrette

Arugula is pretty strong and an acquired taste. I've never liked eating it until I made this recipe. The dressing and pear balance out the flavors. Add extra pear if the bitterness of the arugula is still a bit much. My husband liked it and wants me to make it again since we're trying to increase our consumption of "greens" and are tired of the same old salad combinations.

Romaine Rice Tuna Salad

I've made this recipe about 5 times. I use half a bag of spinach instead of romaine lettuce. I also throw in about 1/4 cup chopped walnuts for some crunch. I also add an extra carrot. It's easy to modify this recipe and add a little more or less of the ingredients depending on your tastes. Definitely a departure from your typical mayonnaise based tuna salad!

This recipe is yummy and simple. I followed the advice of the other reviewer and added garlic powder. Also I used cooked leftover hamburgers that I simply chopped up finely and added.
