Lima Bean Pasta

I was a little hesitant about using tarragon, because I was not at all familiar with it. Turns out that I really like the flavor it gives this dish. I love this recipe and could eat it as a main course!

Kale, Quinoa, and Avocado Salad with Lemon Dijon Vinaigrette

I'm always looking for new ways to use quinoa and this recipe was a good find. I did not have any kale on hand so I used baby spinach leaves and it was a great substitute. The only thing I did not care for was the dressing, so I added a little honey to it and it was a huge improvement.

Homemade Black Bean Veggie Burgers

These were really tasty. I had to use at least double the amount of bread crumbs to get them to hold together and took others suggestions about chilling them before cooking. They were just a bit dry, but I smeared some may & ranch dressing on them and it moistened them up. I prefer to eat them without a bun.l

Jay's Signature Pizza Crust

Fantastic recipe! The only changes I made were to use honey instead of brown sugar and I added 1/2 t of garlic powder and 1/2 t Italian seasoning to the crust. I just tossed it in with the oil and salt. This is probably the BEST homemade pizza yet!

Spinach Chickpea Curry

Fantastic! I did not use tofu or curry paste but did follow suggestions made by another reviewer. Heat oil, add 1/2 t cumin, the onions, 1 t garam malsa, 1 t chili powder and 1 T curry. Proceed with everything else as written. I added cooked sweet potatoes and it was great!

Cheesy Potato Casserole

I made this for our Easter dinner and it was a real hit. I did follow the suggestion to use 1/2 Miracle Whip and 1/2 sour cream. Also added the corn flakes. Perfect side dish that everyone enjoyed.

Scott's Buffalo Wing Sauce

This was a good sauce recipe, not terribly hot. I brushed my chicken with olive oil and garlic and omitted the butter. Next time I'm planning on leaving the skin off (don't eat it). If you like your sauce with more kick, add more hot pepper sauce. Gonna try 1/2 cup instead of 1/3 next time.

Marinade for Chicken

I originally gave this only 3 stars then decided to try it again, changing 2 things. First, I pierced each piece of chicken multiple times with a fork to allow the marinade to work its way into the meat. Second, I allowed the chicken to marinade for 2 days, turning each piece over after 24 hours. What a difference! It was full of flavor and produced the most tender chicken I ever served.

Chicken Breasts with Balsamic Vinegar and Garlic

I prepared this as a last minute dinner and what a hit it was! I did not have fresh mushrooms, so had to use canned ones. I served it over Jasmine rice and not a morsel was left for leftovers.

Simple Turkey Chili

Definitely a keeper in my recipe file! I added a can of chili beans in sauce and also used black beans, a favorite of mine. I did add a little more cumin and a pinch of cinnamon.

Catherine's Spicy Chicken Soup

It's no surprise that this recipe got so many high ratings. As 1 writer suggested, I shortened the prep time by btowning the onion along with the cut up chicken breasts. It does not need the tomatoes at all. I did not add them because my guys do not like chunks of tomato in anything. Very flavorful soup!
