Lima Bean Pasta

Reviewed: Feb. 18, 2007
I was a little hesitant about using tarragon, because I was not at all familiar with it. Turns out that I really like the flavor it gives this dish. I love this recipe and could eat it as a main course!

Parmesan Zucchini Bread

Reviewed: Sep. 23, 2007
Nice change from the usual sweet taste of zucchini bread. I took the suggestion of adding more parmesan and it was REALLY good, especially toasted.

Teriyaki Chicken for the Busy Cook

Reviewed: Oct. 17, 2007
Sorry, but my family did not care for this recipe Very bland and not much of a teriyaki flavor. Tasted like chicken cooked in orange soda. Would not make again.

Baked Teriyaki Chicken

Reviewed: Oct. 17, 2007
Really delicious! I took the hint of lining the pan with foil (great cleanup saver). Next time I make it, I'm planning on taking the skin off the chicken before baking, as my family does not like soft "rubbery" skin. Great flavor and pretty darn easy to boot!

Shrimp Linguine Alfredo

Reviewed: Nov. 2, 2007
I have to agree, this recipe was quite bland. I added some Old Bay seasoning to give it some taste. Probably would not make again.

Middle Eastern Rice with Black Beans and Chickpeas

Reviewed: Nov. 18, 2007
This was really a good recipe and quite different. I did not use any meat or turkey with mine, but I did add onion as one reader suggested. Very tasty. Next time I might grate up a little carrot (and perhaps add a little celery) for color. Will definitely make again.

Artichoke & Spinach Dip Restaurant Style

Reviewed: Jan. 2, 2008
I made this for New Year's and it was just OK. I followed the recipe exactly. Guess it's just a matter of personal taste. My guests tried it, but were not that impressed. Most thought it was rather heavy (perhaps the cream cheese was too much?)

Fantastic Focaccia Bread

Reviewed: Jan. 6, 2008
Like one of the other reviewers, this was my first time making focaccia bread. I have to agree that it was not what I was expecting. I added the extra spices as suggested by others, but overall, it was pretty dry.

Barley and Mushrooms with Beans

Reviewed: Jan. 7, 2008
Wow! This is going to be a regular among my favorite recipes. Took others suggestions adding carrots. I substituted white beans with a can of red kidney beans (rinsed). The color that they added maded it a very appealing dish. Thanks!

Zulandt's Lentil Casserole

Reviewed: Feb. 5, 2008
Wonderful recipe! I followed others suggestions and added garlic and a few chopped carrots. Didn't have zucchini and omitted the cheese (allergies). I did cut the recipe in half and thought it was just a little dry, so I added a can of diced tomatoes. Yum! Definitely a keeper!

Vegetarian Cottage Cheese Patties

Reviewed: Feb. 13, 2008
I followed the suggestion to bake these instead of frying and had no problem with them sticking. I'm only giving this recipe 3 stars because I thought they were too salty. Between the dry onion soup mix and the cream of mushroom soup, it was really too much salt for my tastbuds.

Artichoke Spinach Lasagna

Reviewed: Feb. 24, 2008
Great recipe! I ended up using garden rotini noodles because it was all I had. Also used chunky vegetable pasta sauce and it was a terrific meatless dish. Very tasty and satisfying!

Quinoa and Black Beans

Reviewed: Mar. 16, 2008
I could not locate quinoa anywhere in our area, so I used brown rice in it's place. This was a good and easy recipe to assemble and I'll definitely make it again. Updated review - I located quinoa and made this recipe as stated (minus the cilantro - do not like it). I thought it was good, but just a tad on the bland side. I am curious about others adding canned tomatoes. Will give that a try next time or perhaps salsa.

Broccoli Salad Supreme

Great tasting and refreshing salad! I'm a vegan, so I omitted the bacon and used sunflower seeds instead of almonds (didn't have any on hand). Will definitely make again.

Lentils and Rice with Fried Onions (Mujadarrah)

Reviewed: Mar. 31, 2008
This was good, not great. I thought it was a little bland. I did use extra onion and broth and added cumin as suggested, and I think without them it would be boring. I was uncertain about using cinnamon, so I added just a sprinkle. Next time I'll leave the cinnamon out.

Wonderful bread! I've made this recipe a few times and each time the bread disappears way too fast. My son can eat an entire loaf in one sitting!
