Incredible Chicken

Reviewed: Mar. 21, 2010
I'm giving this 5 starts because you can't ask for an easier way to give chicken a little different taste. Will definitely make this one again.

Spinach and Rice (Spanakorizo)

Reviewed: Mar. 21, 2010
This was an average recipe. A little on the bland side, but if you add enough Feta cheese, it develops more taste.

Brown Rice Lentil Salad

Reviewed: Mar. 1, 2010
This was pretty good. After reading other reviews about the dressing, I decided to try it before I poured it all over the entire dish. I'm glad I did. The red wine vinegar was overpowering, so I added about 2 t of honey and it made a decent dressing.

Sunny Pepper Parmesan Rice with Spinach

Reviewed: Feb. 21, 2010
Being a vegetarian, I'm always looking for new ideas and I really enjoyed this rice dish. The only changes I made were to use brown rice, frozen spinach and balsamic vinaigrette dressing. The next time I make it, I'm going to add a can of black beans and use it as a main dish.

Spinach Chickpea Curry

Reviewed: Feb. 21, 2010
Fantastic! I did not use tofu or curry paste but did follow suggestions made by another reviewer. Heat oil, add 1/2 t cumin, the onions, 1 t garam malsa, 1 t chili powder and 1 T curry. Proceed with everything else as written. I added cooked sweet potatoes and it was great!

Jay's Signature Pizza Crust

Reviewed: Feb. 14, 2010
Fantastic recipe! The only changes I made were to use honey instead of brown sugar and I added 1/2 t of garlic powder and 1/2 t Italian seasoning to the crust. I just tossed it in with the oil and salt. This is probably the BEST homemade pizza yet!

Homemade Black Bean Veggie Burgers

Reviewed: Feb. 10, 2010
These were really tasty. I had to use at least double the amount of bread crumbs to get them to hold together and took others suggestions about chilling them before cooking. They were just a bit dry, but I smeared some may & ranch dressing on them and it moistened them up. I prefer to eat them without a bun.l

Zesty Slow Cooker Chicken Barbecue

Reviewed: Jan. 31, 2010
I was amazed at how good this was. I really was skeptical about the Italian dressing, but it really made a fantastic sauce. I used 1/2 Sweet Baby Rays and 1/2 Open Pit. It was fantastic!

Simple Turkey Chili

Reviewed: Jan. 31, 2010
Definitely a keeper in my recipe file! I added a can of chili beans in sauce and also used black beans, a favorite of mine. I did add a little more cumin and a pinch of cinnamon.

Exquisite Pizza Sauce

Reviewed: Jan. 25, 2010
Excellent sauce! I did not have tomato paste so I used tomato sauce instead. I left out the anchovy paste and cut back on the honey to about 1 t. It was perfect! I should add that I doubled this recipe as I was making a large pizza (11" X 17") and knew that 1 batch would not be enough.

Artichoke and Chickpea Stew

Reviewed: Jan. 24, 2010
Really good recipe. I followed other suggestions and left out the sage, added 1/4 c lentils, 2 T lemon juice and used only 1 can chicken broth. Didn't have fresh tomatoes so I used a 15 oz. can of diced tomatoes. Will definitely make this one again!

Healing Cabbage Soup

Reviewed: Jan. 23, 2010
This soup is a good basic tummy warmer. While most cabbage soups tend to be rather bland, this one wasn't. The nice thing about this recipe is that you can add whatever veggies you like.

Chickpea Falafel Burgers

Reviewed: Jan. 18, 2010
This was very good. I had never had falafel before and was really glad I tried it. I did take others advice and cut the curry down to 1/2 t. I used 1 whole egg instead of 2 whites and it turned out great. Will definitely make this again!

I followed someone else's suggestion and covered the dish with foil during the first 30 minutes, then removed it for the last 20 minutes. Very moist and flavorful!

German Spaetzle Dumplings

Reviewed: Jan. 7, 2010
I have made spaetzle from other recipes and had success. I don't know what the problem was with this recipe, but it was very gooey dough, much runnier than other recipes I've used. The spaetzles were pretty tasteless.
