Barbecue Tofu Sandwiches

This was actually better than I thought it was going to be. I did follow the suggestion to freeze the tofu before frying it and it did change the texture considerably.

Cola Burgers

My guysare not big on hamburgers, but they really liked these. I used Bacon flavored Western Dressing (all I had no hand) and didnot change anything else. I did put the meat in the fridge for 20 minutes as suggested by another reviewer, then formed the patties and put back in fridge for 15 minutes. I cooked them on the stove and basted as I flipped them. Will definitely make these again!

Cheesy Potato Casserole

I made this for our Easter dinner and it was a real hit. I did follow the suggestion to use 1/2 Miracle Whip and 1/2 sour cream. Also added the corn flakes. Perfect side dish that everyone enjoyed.

Best Cranberry Chicken

I made this twice and omitted the sugar the 2nd time I made it. I like cranberries, but this is still really, really sweet. Just FYI, the recipe says it feeds 6 people with 3 lbs of thighs. I weighed out 3 lbs of thighs and it allowed only 1 thigh per person. My family is not made up of huge eaters, but everyone would want 2 pieces, since they're only thighs.

Shrimp Tetrazzini

Yipes, was this heavy! The sauce was a little on the bland side, so I followed others advise and added some garlic and Old Bay. My husband, who is a big eater, even said he'll be digesting this all night. Even with the added garlic and spice, it just wasn't that flavorful.

Honey Baked Chicken II

I'm a fan of honey-mustard and enjoyed this recipe. I used skinless chicken breasts and baked it in a covered corning ware dish. The chicken came out very tender and the sauce is really good. I think the next time I make it, I will slice the chicken breasts so that the sauce can permeate the meat better. Might also consider marinating the chicken in the sauce before baking it.

Sunshine Chicken

I think I'll make this again and try removing the skin first. I did take another reviewers hint to pierce the skin, but not much flavor got to the meat. I don't eat the skin, so I found it a little lacking in flavor. Don't get me wrong...the sauce is great, I just need to change the way I cook this.

Brown Rice Lentil Salad

This was pretty good. After reading other reviews about the dressing, I decided to try it before I poured it all over the entire dish. I'm glad I did. The red wine vinegar was overpowering, so I added about 2 t of honey and it made a decent dressing.

Sunny Pepper Parmesan Rice with Spinach

Being a vegetarian, I'm always looking for new ideas and I really enjoyed this rice dish. The only changes I made were to use brown rice, frozen spinach and balsamic vinaigrette dressing. The next time I make it, I'm going to add a can of black beans and use it as a main dish.

Spinach Chickpea Curry

Fantastic! I did not use tofu or curry paste but did follow suggestions made by another reviewer. Heat oil, add 1/2 t cumin, the onions, 1 t garam malsa, 1 t chili powder and 1 T curry. Proceed with everything else as written. I added cooked sweet potatoes and it was great!

Jay's Signature Pizza Crust

Fantastic recipe! The only changes I made were to use honey instead of brown sugar and I added 1/2 t of garlic powder and 1/2 t Italian seasoning to the crust. I just tossed it in with the oil and salt. This is probably the BEST homemade pizza yet!

Homemade Black Bean Veggie Burgers

These were really tasty. I had to use at least double the amount of bread crumbs to get them to hold together and took others suggestions about chilling them before cooking. They were just a bit dry, but I smeared some may & ranch dressing on them and it moistened them up. I prefer to eat them without a bun.l

Zesty Slow Cooker Chicken Barbecue

I was amazed at how good this was. I really was skeptical about the Italian dressing, but it really made a fantastic sauce. I used 1/2 Sweet Baby Rays and 1/2 Open Pit. It was fantastic!

Simple Turkey Chili

Definitely a keeper in my recipe file! I added a can of chili beans in sauce and also used black beans, a favorite of mine. I did add a little more cumin and a pinch of cinnamon.
