Jamie's Cranberry Spinach Salad

Reviewed: Nov. 22, 2010
I made this for lunch and added cubes of cooked chicken breast and feta cheese. I didn't have almonds, so I used sunflower seeds. It was excellent!

White Chili I

Reviewed: Nov. 21, 2010
This dish did not go over well with the family so I won't be making it again. It was unappetizing to look at and a bit bland.

Garbanzo Bean Salad

Reviewed: Nov. 18, 2010
This was really easy to put together and quite tasty. I added sunflower seeds and grapes. It seemed like it needed some kind of seasoning, but I wasn't sure of what to add. May have to experiment with this one.

Loved it! I used chicken broth in place of water and doubled the lentils. I served it on jasmine rice. Delicious!

Black Bean and Corn Salad

This was good, but not great. It seemed like it was missing something, but I'm not sure what. Worth playing with to suit your taste.

Basil Shrimp

Reviewed: Sep. 14, 2010
Great recipe and I really liked the fact that you don't have to marinade for hours to get great flavor in the shrimp. The only thing I did differently was to sprinkle lime juice on the shrimp right before cooking. This avoids the problem of the juice cooking the shrimp while they marinade.

Marinade for Chicken

Reviewed: Sep. 12, 2010
I originally gave this only 3 stars then decided to try it again, changing 2 things. First, I pierced each piece of chicken multiple times with a fork to allow the marinade to work its way into the meat. Second, I allowed the chicken to marinade for 2 days, turning each piece over after 24 hours. What a difference! It was full of flavor and produced the most tender chicken I ever served.

I don't know what went wrong as I followed the directions as originally written. My guys said it reminded them of eating liver.

Company Couscous

Reviewed: Sep. 2, 2010
This was my first experience cooking couscous so I wasn't sure what to expect. I found it to be rather bland as another rater commented. Perhaps it is supposed to be bland? I may look for another recipe so that I have something to compare it with

Great way to cook corn. The soaking in water is important.

Scott's Buffalo Wing Sauce

Reviewed: Jul. 27, 2010
This was a good sauce recipe, not terribly hot. I brushed my chicken with olive oil and garlic and omitted the butter. Next time I'm planning on leaving the skin off (don't eat it). If you like your sauce with more kick, add more hot pepper sauce. Gonna try 1/2 cup instead of 1/3 next time.

St. Louis Pork Steaks

Reviewed: Jul. 2, 2010
Oh, I was really hoping this was going to be a good receipe. I followed the direction as stated and all we could taste was vinegar. Tried saving it with BBQ sauce without any luck. Unless you love vinegar-flavored meat, pass on this recipe!

Barbecue Tofu Sandwiches

Reviewed: May 5, 2010
This was actually better than I thought it was going to be. I did follow the suggestion to freeze the tofu before frying it and it did change the texture considerably.

Cola Burgers

Reviewed: May 3, 2010
My guysare not big on hamburgers, but they really liked these. I used Bacon flavored Western Dressing (all I had no hand) and didnot change anything else. I did put the meat in the fridge for 20 minutes as suggested by another reviewer, then formed the patties and put back in fridge for 15 minutes. I cooked them on the stove and basted as I flipped them. Will definitely make these again!

I made this for our Easter dinner and it was a real hit. I did follow the suggestion to use 1/2 Miracle Whip and 1/2 sour cream. Also added the corn flakes. Perfect side dish that everyone enjoyed.

Best Cranberry Chicken

Reviewed: Mar. 28, 2010
I made this twice and omitted the sugar the 2nd time I made it. I like cranberries, but this is still really, really sweet. Just FYI, the recipe says it feeds 6 people with 3 lbs of thighs. I weighed out 3 lbs of thighs and it allowed only 1 thigh per person. My family is not made up of huge eaters, but everyone would want 2 pieces, since they're only thighs.

The BEST was to prepare salmon. I cannot tell you how many people I have shared this recipe with. Even non-fish eaters had it admit it was really good.
