Easy OREO Truffles

Reviewed: Dec. 27, 2010
These were a big hit with the kids at Christmas. Got to be a real chocolate lover to appreciate the richness of this treat. I almost panicked when making them because I realized I did not read the directions closely enough and only bought 1 package of the semi-sweet chocolate. Surprisingly enough, the 1 package was enough to cover all of the truffles. If I had bought 2, it would have been wasted.

Pork Chops with Dill Pickle Marinade

Reviewed: Dec. 16, 2010
I don't mean to offend the person who submitted this recipe, but it's more of a cooking hint than what I'd call a recipe. Marinating pork in pickle juice results in pork chops tasting like pickles.

Rosemary Ranch Chicken Kabobs

Reviewed: Dec. 16, 2010
I'm giving this recipe 4 stars because I think it is good, but not great. I couldn't quite put my finger on what the "off" taste was, but it was definitely very tender and moist. I'm not a big fan of rosemary, so maybe that's why I didn't get as excited as some of the other readers. Might give tarragon a try next time.

Honey Key Lime Grilled Chicken

Reviewed: Dec. 16, 2010
Great marinade! I will definitely keep this recipe. I couldn't access my grill due to a sudden storm, so I browned the chicken in some olive oil on the stove.

Bar Cookies from Cake Mix

Reviewed: Dec. 13, 2010
Great recipe and so quick and easy to make. I followed the suggestion of adding 1/3 c water and the dough was still really thick. To make spreading it in the pan easier, I turned the wax bag from the cake mix inside out, put my hand into the bag and pressed the dough onto the cookie sheet.

Lentil Soup

Reviewed: Dec. 6, 2010
This is a good recipe, but after making it, I found that it's almost identical to the way I've always made my lentil soup, so for me, it was a repeat of something I've always made. .

Catherine's Spicy Chicken Soup

Reviewed: Dec. 4, 2010
It's no surprise that this recipe got so many high ratings. As 1 writer suggested, I shortened the prep time by btowning the onion along with the cut up chicken breasts. It does not need the tomatoes at all. I did not add them because my guys do not like chunks of tomato in anything. Very flavorful soup!

Honey Mustard Grilled Chicken

Reviewed: Dec. 3, 2010
This was a very quick and simple recipe that's great for a last-minute menu. My grill was not working, so I had to cook it on the stove and it turned out very good. Before I cooked the chicken, I squeezed about 1/4 of a fresh lime on each breast about 10 minutes before cooking. The juice helped tenderize the chicken and give it a little zest.

Candied Sweet Potatoes

Reviewed: Nov. 28, 2010
This dish went over pretty well with my guests. I personally do not like candied sweet potatoes, so I wouldn't eat them. It was easy enough to assemble and looked pretty on the table.

Chicken Breasts with Balsamic Vinegar and Garlic

Reviewed: Nov. 23, 2010
I prepared this as a last minute dinner and what a hit it was! I did not have fresh mushrooms, so had to use canned ones. I served it over Jasmine rice and not a morsel was left for leftovers.

Jamie's Cranberry Spinach Salad

I made this for lunch and added cubes of cooked chicken breast and feta cheese. I didn't have almonds, so I used sunflower seeds. It was excellent!

White Chili I

This dish did not go over well with the family so I won't be making it again. It was unappetizing to look at and a bit bland.

Garbanzo Bean Salad

Reviewed: Nov. 18, 2010
This was really easy to put together and quite tasty. I added sunflower seeds and grapes. It seemed like it needed some kind of seasoning, but I wasn't sure of what to add. May have to experiment with this one.

Basil Shrimp

Reviewed: Sep. 14, 2010
Great recipe and I really liked the fact that you don't have to marinade for hours to get great flavor in the shrimp. The only thing I did differently was to sprinkle lime juice on the shrimp right before cooking. This avoids the problem of the juice cooking the shrimp while they marinade.

Marinade for Chicken

Reviewed: Sep. 12, 2010
I originally gave this only 3 stars then decided to try it again, changing 2 things. First, I pierced each piece of chicken multiple times with a fork to allow the marinade to work its way into the meat. Second, I allowed the chicken to marinade for 2 days, turning each piece over after 24 hours. What a difference! It was full of flavor and produced the most tender chicken I ever served.
