Raisin Rye Bread

I made this in my bread machine last night was was very surprised at how tiny and dense a loaf this recipe produced (maybe 6" x 4"). I had never used anything other than dry milk in the bread machine and wondered if it was the milk that weighed down the batter? I could not resist cutting off the heel and spreading some cream cheese on that warm slice. Wow - was it ever good! I replaced the molasses with honey, used butter instead of oil, did not add orange peel or anise or fennel (don't like them). I just wish this was a bigger loaf because the taste is very good.

Double Layer Chocolate Peanut Butter Pie

Something is terribly wrong with this recipe. I used exactly what is called for in the ingredients list. After spreading the creamed mixture into the 9" pie crust, there was very little room left for the pudding topping. I went ahead and proceeded with the directions anyway and sure enough, the pudding mixture would not fit on the pie. In desperation, I put everything in the fridge and hopefully will be able to scoop the rest of the pudding on top of the pie once everything sets. I even double checked the size of the pie crust and it was 9" as stated on the label. I don't know how all of you got everything to fit in your pie crusts.

Imitation Meatloaf

This was pretty good and I think with some tweaking it would be really good. Make sure you cook the lentils long enough to get them really soft. I should have added the extra water that another person suggested because mine were still a little too firm.

Simply the Easiest Beef Brisket

I had never cooked a brisket before, so based on the good reviews this recipe got, I thought it would be a good one to start with. The brisket I bought was about 2 lbs, so I had plenty of marinade left. Since I don't eat red meat, I used the extra on a chicken breast. I followed the same directions given for the brisket and it was amazingly good! My family enjoyed the brisket and said that it was really tender and moist. I cut the brown sugar down to 1/2 c as someone else suggested. I think 3/4 c would have been way too sweet.

Simple Whole Roasted Chicken

The spices used in this recipe are great, but you definitely have to double them to get the flavor to permeate the entire bird. After reading about the smoke and burning eyes issues, I opted not to cook at such high temps. Instead, I baked at 350 for almost 2 hours. the chicken came out very moist, tender and full of flavor. I did not have any onions, so I put a lime in the cavity along with the garlic. It went very well with the other spices.

Vegetarian Chickpea Sandwich Filling

I've tried mashing and processing chickpeas before and it's a disaster, so I decided to leave them whole and eat this as a salad instead of sandwich spread. It was marvelous! I did add more than 1 stalk of celery and since I didn't have any dill weed, I added about 1/2 T of juice from a dill pickle jar. Also added a touch of garlic salt. Turned out great!

Black-Eyed Pea Salad II

I'm glad I did not rate this the same day I made it because I honestly wasn't impressed. Having let it sit in the fridge for a couple of days, I forgot I even made it. Just tasted it again and what a difference! Good mixing of flavors and I'm adding to my vegetarian lunch menus.

Good receipe. I used tenderized roundsteak that I flattened even more with a tenderizer hammer. I spread a little dijon mustard, garlic powder nad black pepper on each strip of meat before putting on the bacon and onion and rolling up. My family does not like dill pickles, so I omitted them. I used a can of beef broth with some garlic cloves and bay leaf as suggested by others.

Fantastic Black Bean Chili

I was expecting something really outstanding after reading several of the reviews. It was a good chili, not what I could call fantastic. I added 1 T cumin and some red pepper flakes as someone else suggested. It helped, but still not anything in the category of outstanding.

Baked Asparagus with Balsamic Butter Sauce

Sorry, but these were a bomb at Christmas dinner. I guess you have to really like soy sauce to appreciate this recipe. OK, I tried this again and after cutting soy sauce to 1 t. and increasing balsamic vinegar to 1 1/2 T, it was much better. I made mine in my toaster oven since I didn't have a large amount of asparagus.

Easy OREO Truffles

These were a big hit with the kids at Christmas. Got to be a real chocolate lover to appreciate the richness of this treat. I almost panicked when making them because I realized I did not read the directions closely enough and only bought 1 package of the semi-sweet chocolate. Surprisingly enough, the 1 package was enough to cover all of the truffles. If I had bought 2, it would have been wasted.

Pork Chops with Dill Pickle Marinade

I don't mean to offend the person who submitted this recipe, but it's more of a cooking hint than what I'd call a recipe. Marinating pork in pickle juice results in pork chops tasting like pickles.

Rosemary Ranch Chicken Kabobs

I'm giving this recipe 4 stars because I think it is good, but not great. I couldn't quite put my finger on what the "off" taste was, but it was definitely very tender and moist. I'm not a big fan of rosemary, so maybe that's why I didn't get as excited as some of the other readers. Might give tarragon a try next time.

Bar Cookies from Cake Mix

Great recipe and so quick and easy to make. I followed the suggestion of adding 1/3 c water and the dough was still really thick. To make spreading it in the pan easier, I turned the wax bag from the cake mix inside out, put my hand into the bag and pressed the dough onto the cookie sheet.
