Slow Cooker Buffalo Chicken Sandwiches

Wow. This recipe definitely answers my craving for buffalo chicken. I had cooked some chicken breasts in the crock pot and was undecided as to what to do with them when I came across this recipe. Since me chicken was already cooked, I shredded it and mixed together Frank's Wing Sauce with some bottled ranch dressing. I poured it over the chicken and put back in the fridge for a few hours. When it was time to eat, I simply reheated it and served on fresh ciabatta rolls. What's nice about this recipe is that you can calm it down a bit by adding more ranch,for those who can't tolerate the heat. Definitely a keeper!

Actually Delicious Turkey Burgers

Definitely need to use 1 whole egg instead of 2 whites. It's the yolk that holds the meat together. I kicked up the garlic a bit and added diced red pepper. Yum!

Strawberry Spinach Salad I

This was a delightful salad, but do NOT put the ingredients in a blender as 1 reviewer suggested or you will end up with a thick paste. I forgot that too much mixing of oil will turn it to a solid and we literally had to spread the dressing on our salad servings because it was not pourable.

Blueberry Spinach Salad

Good salad. I thought the amount of dressing was way too much, as another rater stated. I used the recipe as stated and to my taste, it had a bit of a bite, however, the guests I served it to really liked it.

Ken's Perfect Hard Boiled Egg (And I Mean Perfect)

The first 2 times I made these, the yolks came out a little mushy. The 3rd time I made them, I increased the cooking time to 20 minutes and they came out perfect.

O loved the marinade for these portobellos. Quick and easy to assemble! I also fixed some carmalized onion to put in the buns. Served these on ciabatta rolls!

Insanely Easy Vegetarian Chili

I'm glad I didn't rate this last night when I put this together because my initial reaction was disappointing. Having let it sit in the fridge overnight, I reheated some for dinner tonight and it improved tremendously! I added black beans and chickpeas, kicked up the spices a bit more and did end up adding mushrooms, too. Flavors need to mellow overnight.

I thoroughly enjoyed this recipe and took the advice of others to add a few peas. I served it over Jasmin rice and it was so flavorful! Will definitely make this again. Very simple to put together, too!

Delicious Black Bean Burritos

Wow! These were great! I did take the advise of others and added a can of diced tomatoes, 1/2 t cumin and 1/2 t chili powder. I omitted the cilantro because I don't like it. I also used a good half of a brick of cream cheese. Unless you have ginormous tortillas, there was more than enough to fill 4 regular sized tortillas very generously. Great find!

Sugarless Cookies II

I've been trying to get away from sugar and thought this recipe would satisfy my craving for cookies. I made a few changes: used twice the amount of cinnamon and also kicked up the nutmeg and cloves. Didn't have walnuts on hand but did add about 1 cup chopped up prunes along with the cup of raisins. I used cinnamon applesauce and margarine instead of the oil. Because someone said they are not really sweet, I added 1 T honey for good measure. The batter was thin so I decided to bake them like I would brownies, in a cookie sheet (for about 20 minutes). The aroma that came from the oven was heavenly. They fit the bill for what I was wanting. Best thing about this recipe is you can add whatever suits your tastes.

Butter Chickpea Curry

Wow! This was so flavorful, I had a hard time stopping eating it. I found this recipe at the last minutes and discovered I had no potatoes or cauliflower, so I used sweet potato and broccoli. Had no tomato soup or canned tomatoes, so I had to use a can of tomato sauce. I went a little heavier on the garam masala and cumin. I also substituted greek yogurt for the milk. What a fantastic aroma!

Flax and Sunflower Seed Bread

After discovering I was out of wheat flour, I substituted with rye. I also added about 1/2 cup of dried cranberries. The result was a very hearty, tasty bread.

Black Bean and Salsa Soup

Only one word comes to mind: FANTASTIC! I used others suggestions to add 3 t lime juice, triple the cumin and add a 3rd can of black beans (left whole). This soup is better than Panera's version!

Baked Falafel

Really good flavor, but a little on the dry side. I like the fact that you do not use breadcrumbs in them. I opted to not fry them, but baked them on a cookie sheet. I'm wondering if I add the oil to the batter and then bake, if they would be a little moister?
