Roasted Chickpeas

Loved this recipe! I took the suggestion of Kelly and roasted mine without any oil. When they were done, I drizzled them with olive oil and lightly salted them. The only problem I had with them was once I started eating them, I could not stop!

Beer-Boiled Shrimp

Have to admit I was quite disappointed after reading all the good reviews. I did add garlic and Old Bay as suggested by other reviewers as they sounded like good additions. My family was not impressed and I had leftovers, which is unusual when I make shrimp. To add insult to injury, no one wanted to take the leftovers, so they ended up in the trash.

Roasted Yam and Kale Salad

Cheesy Quinoa Pilaf with Spinach

After reading other's reviews, I tripled the recipe and am glad I did as it would not have been near enough to satisfy my appetite (this was my entire dinner). I was out of sunflower seeds, so I used slivered almonds and Parmesan cheese was all I had on hand. It was fantastic! I've fixed quinoa many different ways and this is definitely one of my favorites.

Quinoa Black Bean Burgers

I thought this was a pretty decent veggies burger. My only criticism was that it was just a little on the dry side. Black beans have a tendency to soak up moisture in most recipes, so I'm not faulting the recipe contents. I sliced some avocado on top of my burger and ate it without the bun. Will definitely make again!

Chinese Chicken Fried Rice II

This was tasty and really easy to make. I didn't have any peas to add, and thought it really needed a little color, so I chopped up some fresh spinach and tossed it in with the onions until it slightly wilted. Next time I may add red bell pepper for a little more color.

Cinnamon Orange Turkey Scaloppini

I thought this was a little bland and was a bit disappointed. If I make it again, I'll definitely double the garlic and cinnamon and carmalize an onion. I did take the advice from others and doubled the OJ & lemon juice. Without doubling the sauce, it would not have produced enough to cover all the cutlets.

Lentil Loaf

By far the best receipe I've tried yet for lentil loaf. the only changes I made were to use 1/2 c bread crumbs instead of slices of bread, 2 T ketchup instead of tomato paste, added 1/2 onion along with some chopped celery, carrot & green pepper. I also spread extra ketchup on top before baking. Yum!

Garlicky Quinoa and Garbanzo Bean Salad

I'm a big fan of quinoa and I really like garbanzo beans, but I have to agree with a few of the others - this recipe was a bit bland. I ended up adding some cumin to help lift the flavor.

Curried Brown Rice

This was really good! I used a whole onion instead of just half. Hate to waste veggies (there's a thing going around on the net saying you should not keep cut onions for future use). This rice is very flavorful and the fragrance in the house while it cooks is amazing! I threw in a handful of dried cranberries when it was done. Will definitely make this again!

Pork Brine

I'm giving this 4 stars because even though I modified it based on what others wrote, it is a good brine mixture. For 4 thick chops, I used 1 c cider vinegar, 1/4 c salt, 2/3 c brown sugar, 2 t. black pepper, 2 t mustard powder and 2 c ice water. I think the mistake many people made was they either left it in brine too long or did not rinse well enough. You MUST rinse brined meat very thoroughly to wash off the salt. I let the rinsed chops rest in a bowl of ice water for about 5 moinutes, themn pat dry and cooked.

Caramel Apple Pork Chops

I decided to brine the pork chops before using this recipe. My brine was 1 c cider vinegar, 1/4 c salt, 2/3 c brown sugar, 2 t mustard powder and 2 c water. I let them sit in brine for about 2 hours, then rinsed super well, dried them and proceeded with this recipe. I followed the suggestion to carmalize some onion and add double the ingredients for the sauce. Meanwhile, I browned the pork chops in another pan, then poured the sauce on top of the chops. Covered, baked at 350 for 40 minutes, then removed cover and baked another 15. My family really enjoyed these chops - they came out very tender and tasty!

Green Beans with Cherry Tomatoes

I made this for Thanksgiving and it got great reviews from my family. After reading all the reviews, I cut the butter down to 1/8 cup (and frankly it could have been cut down even more). I did not add sugar, but did use fresh garlic instead of garlic salt. Also, I added the cooked beans to the skillet with the butter, tossed to coat and then turned off the heat. Then I added the grape tomatoes. Delish!!!

Manicotti Italian Casserole

This was a very good recipe in that it was easy to assemble and my family loved it. For those of you who are criticizing that it is not manicotti - you need to read the passage that the submitter of this dish wrote next to the photo. It's what his family nicknamed this dish. Not really worth getting upset about, in my book. A noodle is a noodle...LOL

Dave's Mocha Chicken

Having read all of the reviews I made the following changes: double the coffee and cut the soy sauce in half. Add 1 t. cocoa powder, add garlic and a sprinkle of ginger. Forget the oil altogether! I used skinless chicken thighs and opted to bake them instead of frying. Even with baking, there was a good amount of grease when they were done. 350 degree oven for an hour. I heated the marinade on the stove and poured over the chicken before putting in oven. It turned out very tasty and is great over rice!
