Pork Brine

I'm giving this 4 stars because even though I modified it based on what others wrote, it is a good brine mixture. For 4 thick chops, I used 1 c cider vinegar, 1/4 c salt, 2/3 c brown sugar, 2 t. black pepper, 2 t mustard powder and 2 c ice water. I think the mistake many people made was they either left it in brine too long or did not rinse well enough. You MUST rinse brined meat very thoroughly to wash off the salt. I let the rinsed chops rest in a bowl of ice water for about 5 moinutes, themn pat dry and cooked.

Caramel Apple Pork Chops

I decided to brine the pork chops before using this recipe. My brine was 1 c cider vinegar, 1/4 c salt, 2/3 c brown sugar, 2 t mustard powder and 2 c water. I let them sit in brine for about 2 hours, then rinsed super well, dried them and proceeded with this recipe. I followed the suggestion to carmalize some onion and add double the ingredients for the sauce. Meanwhile, I browned the pork chops in another pan, then poured the sauce on top of the chops. Covered, baked at 350 for 40 minutes, then removed cover and baked another 15. My family really enjoyed these chops - they came out very tender and tasty!

Green Beans with Cherry Tomatoes

I made this for Thanksgiving and it got great reviews from my family. After reading all the reviews, I cut the butter down to 1/8 cup (and frankly it could have been cut down even more). I did not add sugar, but did use fresh garlic instead of garlic salt. Also, I added the cooked beans to the skillet with the butter, tossed to coat and then turned off the heat. Then I added the grape tomatoes. Delish!!!

Manicotti Italian Casserole

This was a very good recipe in that it was easy to assemble and my family loved it. For those of you who are criticizing that it is not manicotti - you need to read the passage that the submitter of this dish wrote next to the photo. It's what his family nicknamed this dish. Not really worth getting upset about, in my book. A noodle is a noodle...LOL

Dave's Mocha Chicken

Having read all of the reviews I made the following changes: double the coffee and cut the soy sauce in half. Add 1 t. cocoa powder, add garlic and a sprinkle of ginger. Forget the oil altogether! I used skinless chicken thighs and opted to bake them instead of frying. Even with baking, there was a good amount of grease when they were done. 350 degree oven for an hour. I heated the marinade on the stove and poured over the chicken before putting in oven. It turned out very tasty and is great over rice!

The Best Potato Salad

This recipe has a lot of taste. As others, I left out the olives and pickle relish (we don't like sweet potato salad). The pepperocini is a must as is a little finely chopped red onion.

Chicken and Dumplings III

This dish went over well with the family. I used 1 can celery coup and 1 can of cream chicken soup. Also used chicken broth to cook chicken in. I threw in a handful of frozen peas, some chopped onion and a little chopped celery.

Bread Machine Rolls

I'm not a fan of white bread, but my guys liked these. I split the dough in half and made 6 rolls out of one half and 4 larger rolls out of the other half. The 4 will be used for sandwiches in tomorrow's lunch.

Marinated Tuna Steak

All I can say is "WOW!". There is only 1 restaurant I've ever had outstanding tuna steak at and I'm thinking this recipe meets, if not beats, theirs. I let my tuna marinade for about 7 hours and it was so flavorful and tender, I could not stop eating it. Thanks for such a great recipe! Update: I used this marindade on 2 rib eye steaks and chicken breast and it was fantastic!

Chicken Avocado Salad

This was fast and easy to assemble, which is what I appreciate in recipes. I think this recipe lends itself to a of options, depending on a person's likes. I left out the cilantro (don't like it) but added chopped red pepper, red grapes and some walnuts. I didn't have the dressing called for, so I used my favorite: Paul Newman's Light Honey Mustard Dressing. Wow! This was my dinner and I will definitely make it again.

Quinoa with Chickpeas and Tomatoes

I love the versatility quinoa offers, however, this receipe really needed more flavor - I doctored it up with 2 t. cumin and 1 t cinnamon. The olive oil is totally unnecessary so I left it out.

Grilled Potatoes and Onion

Doesn't get any easier than this. I sliced my potatoes into long slabs for faster cooking. Be sure to oil or spray the foil because this was a great way to avoid sticking. A sprinkle of your favorite cheese finishes them off beautifully!

Delectable Marinated Chicken

This was really easy to put together. The only changes I made was to substitute honey for molasses (didn't have any)and omitted the liquid smoke (don't care for it). I marinated chicken thighs for about 5 hours and could barely taste the seasonings. Next time, I'll plan on letting them soak overnight.

Pork Tenderloin Marinade

This marinade really did a great job of tenderizing the pork tenderloin I bought. After reading some of the reviews, I decided to let it sit only 4 hours as several people said it was too strong if left in longer. They were so wrong! My guys said it didn't have all that much taste to it, but was very tender. Next time, I'll let it marinade all day long or overnight.

Salmon Avocado Salad

This was a great inspiration recipe for me and I have to admit I made several changes. I eat salmon at least 3 times a week, and usually bake or grill it. I never use oil with it, as it is an oily fish to begin with. This time I decided to poach the fish using 1/2 c water, 1/2 wine, some sliced onion & tarragon. Only took 5 minutes and poaching leaves NO fishy odor in the house. I made my salad bed with romaine lettuce and added fresh mushrooms (why saute them?), avocado, and grape tomatoes. (Had no feta or would have it it too)To save time, I used a little of Paul Newman's Lite Honey Mustard Dressing. Wow! What a fantastic salad. Next time I think I'll add some red pepper and a handful of blueberries.

Quinoa Tabbouleh

I'm a new fan of quinoa and have been experimenting with it every time I find a new recipe. I found this to be a bit bland, so I added 3 T curry, 1 t. cumin and 1/2 t. cinnamon. Also, I prefer onions cooked, so I browned them with some garlic, then proceeded with the rest of this recipe.

Cranberry and Cilantro Quinoa Salad

Love the list of ingredients (minus cilantro). I kicked this up a bit by increasing curry to 3 t. Added 1 t cinnamon and 1 t cumin. Since I planned on having this as my lunch vs a side dish, I added a can of rinsed and drained black beans. Not only was this a delicious meal, it was so colorful as well.

Toasted Garlic Bread

Very good. I cut my loaf in half, spread the mixture on the inside, then wrapped it in foil and put it on the grill for about 15 minutes. I omitted the cheese due to allergies.
