Groovy Green Smoothie

I tried it twice and the 2nd time I used plain Greek yogurt and added a little almond milk. I ended up using a whole cored apple and left the skin on (that's where all the vitamins are!). My blender was able to get the skin broken down so there were no chunks left at all.

Oven-Roasted Asparagus

I followed others suggestions and used Pam spray in place of oil. I baked at 425 for only 8 minutes and it was perfect. I really enjoyed the crispness of the asparagus.

Kale, Quinoa, and Avocado Salad with Lemon Dijon Vinaigrette

I'm always looking for new ways to use quinoa and this recipe was a good find. I did not have any kale on hand so I used baby spinach leaves and it was a great substitute. The only thing I did not care for was the dressing, so I added a little honey to it and it was a huge improvement.

Sweet and Spicy Green Beans

What a refreshing way to prepare green beans. I fixed them for a family dinner and everyone really enjoyed them. As state by many others, I did not have garlic chili sauce so i just used regular chili sauce.

Chicken Piccata with Artichoke Hearts

I can sum this recipe up with two words: bland and disappointing. After following the directions as given, the end result was a very bland dinner. Had to bring a lot of seasonings to the dinner table.

Baby Spinach Omelet

I recently learned that coconut oil (which we were always told to stay away from) is actually good for you - the brain loves it! Anyway, I used coconut oil to saute fresh chopped onions, then added baby spinach leaves just until they softened. In a separate bowl, I whipped 2 eggs, added the Parmesan cheese and black pepper. I poured the egg mixture over the spinach and allowed it to set, flipping it one time. Left out the nutmeg because I'm not a big fan of it. This was one of the BEST omelets I've ever had and will definitely be making it again. These were the BESTi

Garlic Kale

So incredibly easy and really good! I sauteed the kale first, then added the garlic as suggested by others. If you massage the kale a little before adding to the skillet, it does make the leaves more tender and you don;t have to cook it very long at all. A sprinkle of Parmesan cheese is a wonderful addition at the end.

Stir-Fried Kale and Broccoli Florets

I've been a fan of kale for a while and have been looking for a different way to prepare it. I followed the suggestion of simmering the kale in a little chicken broth while I chopped the broccoli. Next, I added the garlic, oil and broccoli, 1 T lime juice and a few sprinkles of red pepper flakes. A splash of balsamic vinegar and a handful of feta cheese made for an out-of-this-world dish. I agree with the other person who said that this recipe would not be near enough to feed 6 people. I ate half for dinner and saved the other half for another meal.

Apple Crisp II

This turned out great! I used granny smith apples, cut the white sugar to 1/2 cup and water to 1/4 cup. I followed someone's advise to toss the apple slices in cinnamon & sugar mixture. I doubled the topping so that I could have a double crust and it was fantastic!

Roasted Garlic Cauliflower

Very good. I also lowered the oven to 400 degrees. I can't imagine why anyone would even think about covering this as you would end up with steamed cauliflower.

Ginger Glazed Mahi Mahi

This is truly a wonderful way to prepare this fish. I chose to bake mine to make it healthier (350 degrees for about 10 minutes) The only ingredient I question is the olive oil added to the marinade. I think next time I prepare it, I will not add it and see how it turns out.

Artichoke Chicken Casserole

It was OK, not great. Although I followed the directions exactly as written, it seemed to be missing something. I did use marinated artichokes as suggested by someone else, but it was still a little on the bland side.
