Shrimp Quesadillas

Very good! I halved the recipe & only had yellow peppers. I made 4 tortillas, instead of 3, as the amount can easily be stretched. So yummy!

Mie Goreng - Indonesian Fried Noodles

My family couldn't stop raving about this meal. My husband asked for a glass of wine to refresh his palate after every delicious bite. I scaled the recipe to serve 3, but used 2 packages of noodles. I made my own Indonesian sweet soy sauce using 2 TBS soy to 3 TBS brown sugar, boiling it to a smooth syrup, then adding the oyster & soy sauce. I will have to make it again...and again! PS: a small 8oz of chicken breast is all that's needed to serve 3 people - sliced very thin, of course. With all the other vegetables & noodles, it was enough. This recipe is a winning budget recipe.

Sean's Falafel and Cucumber Sauce

My family really liked this meal & I was surprised at how easy it is to make. MUCH better than the packaged falafel mixes I bought at Middle East markets. I will be making my own falafel from now on!

Brennan's Irish Soda Bread

This was sooo easy & sooo good! Much easier AND tastier than another Irish soda bread I tried. I halved the recipe & made a very small loaf which I cooked on toaster setting in a buttered pie tin in my not-so-good/about-to-be-exchanged convection oven. I served it with "True Bangers and Mash with Onion Gravy" recipe here. Cut the loaf in quarters. Hard crust & very soft center. A perfect accompaniment to the dish. I will definitely make this easy & yummy recipe again! I'd like to make it & have it with jam or marmalade. NOT just for breakfast, though!

True Bangers and Mash with Onion Gravy

OMGosh - This was really good!!! I first used the smaller pork links, but added Bratwurst. The potatoes were less done - had to use only electric appliances because our propane line was being replaced, so had to microwave, & mixed them in my KitchenAid. They had some small chunks, but were very good like that. I wondered about the mustard powder, but followed the recipe & it was marvelous! Lots of onions,which I chopped fine. Seemed a lot, but was perfect, as the wine/beef broth sauce tasted savory. I didn't have enough beef broth, so I used half wine, half broth. I served this with a small loaf of Brennan's Irish Soda Bread from this site, which I cooked in my convection/toaster oven & it was all so good. One of my best meals. The family raved about it! I will definitely make this again!

Stuffed Filet Mignon Bites

OMGosh - really good! I had a small amount of Italian dressing, so I added extra - a bit of olive oil, leftover balsamic vinegar/oil marinade from tomatoes I used in another recipe, & a romano dressing - anything like this works well in this marinade. I used a one pound NY steak & pounded the slices thinner, used minced pickled jalapeno in the cream cheese, and wrapped them up. I used the smaller bits of steak also & folded them with the cheese mixture inside. Covered them all with slices or pieces of bacon, then broiled them on a buttered cookie sheet for about 4 1/2 minutes (oops - had to pour off bacon fat), turned & broiled another minute. They are small, so I did not want to over cook them. It made 9 bigger & 6 bite-sized pieces. Served 3 - with a tasty Mexican rice recipe from this site, and added raw veggies, because we all need them. ;) PS, in reference to the one star review: The bacon does not crisp up - it never does in these recipes, but it went very well with the steak, anyway. These must be quickly broiled 2-3" from the heat source. Don't use too much filling or it will ooze.
