Enchilada Meatballs

My whole family loved these! I used gluten free cornbread for the crumbs, and served it over steamed rice, making a great gluten-free dinner! Sides were tortilla chips and a green salad.

Lemon Icing

Love this frosting. I don't recommend adding lemon juice to thin the texture. It loses some of the creaminess. The thickness of the recipe as written worked fine for frosting my cake .

Chicken Chili Soup

Linguine with Chicken and Sauteed Vegetables

Love this recipe! Our grocery store sells a fresh pre-chopped assortment of stir-fry veggies, and any time it's on sale I make this dish. If I use canned chicken it's even faster.

Brownie Crackles

I made this recipe exactly as written, determined to trust the author on all counts. Everything went great (the dough is handle-able if you have a cookie scoop) except the bake time. They were mushy batter after 10 minutes. 13 minutes worked perfectly, but since I'd already wasted 1/3 of the dough, I ended up wishing I'd just made a pan of brownies.

Rich Chocolate Frosting

This will definitely be my chocolate frosting of choice from now on. I agree with the other reviewers - to frost a soft, moist cake you will probably need more than the called-for amount of milk. I had a LOT of frosting left over, after icing a double layer 9-inch round cake with HALF this original recipe.

Italian Bread II

Loved this bread! I shaped the dough into four balls and let them rise in greased, oven-safe rice bowls. They made perfect bread bowls. The texture was just right for holding soup (but definitely use bread flour!). I love soup in a bread bowl, but bakeries seem to only make sourdough ones, which are not our favorite. So this was a treat for our family.

Cuban Midnight Sandwich

These were really good. I cut back on the sauce mixture, and couldn't get the insides warm by pan-frying so I moved them from the pan to the oven to broil them open-faced. The result was great, because everything was warm and melty but the hoagie was still nice and crispy-toasted on the outside. It's just a bit more of a process than originally planned...

Cheddar Beef Enchiladas

My 1- and 3-year-olds ate this up! The only changes I made: doubled the sauce, and used a box of Mexican rice rather than plain. The prep wasn't bad at all, and with the saucier version, it's fun to eat with chips.

Best Big, Fat, Chewy Chocolate Chip Cookie

I wanted the buttery Nestle Tollhouse cookies' flavor, without their tendency to flatten out like pancakes. These fit the bill and they are sweet, yummy and chewy!

Incredibly Easy Chicken and Noodles

What a great, hearty dinner! My kids ate it well, which felt like a miracle. I used healthy request soups and whole grain egg noodles (dry) so it was pretty healthy. I didn't have to change the recipe instructions to use dry noodles. Will definitely make again.

Yum! The blend of flavors is great in this chili, and I can't wait for the leftovers. I used cooked dried beans, canned chicken, and added celery, corn, minute rice and a can of tomatoes. We'll definitely have this again.

Perfectly Moist Irish Wheaten Bread

I didn't know what this was before making it. I was pleasantly surprised with the result! It is moist, dense, with a very wheat-y taste. Such a great alternative to cornbread! The dough was easy to work with. We had it with Michelle's Blonde Chicken Chili (from this site) and it was a great dinner.

Excellent, very sweet cookies. The dough is pretty dry and gave me a good arm workout! But it was worth it. I'll make it with chocolate chips next time.

The moistness is the best thing about this cake! I used extra oreo crumbles in and on this cake. And I made Cool Whip-cream cheese frosting (Creamy Cream Cheese Frosting from this site).
