I pretty much followed the recipe exactly, and it turned out great. It was a little time consuming browning all the vegetables, but I think it added a nice flavour and consistency. I'm going to try grilling the vegetables next time to make it healthier, so we'll see how that goes. I forgot about the feta until about halfway through the layering, but it still held together really well, and was great as a leftover. My husband absolutely loved it and he is not a vegetarian. I'm definitely going to make it again!
