Lentil Soup

I love this recipe- it's simple, healthy and delicious. I usually leave out the celery because I never finish the bunch. It's great with a dollop of sour cream on top, and is great as a leftover.

Vegetarian Moussaka

I pretty much followed the recipe exactly, and it turned out great. It was a little time consuming browning all the vegetables, but I think it added a nice flavour and consistency. I'm going to try grilling the vegetables next time to make it healthier, so we'll see how that goes. I forgot about the feta until about halfway through the layering, but it still held together really well, and was great as a leftover. My husband absolutely loved it and he is not a vegetarian. I'm definitely going to make it again!

Roasted Beets 'n' Sweets

I LOVE this recipe! I have made it a few times and it is great every time. The best thing about it is you can throw in other vegetables and mix things up. I've added peruvian pototoes before, as well as butternut squash and apples! Always a yummy treat!

Beaker's Vegetable Barley Soup

This is a delicious soup and is so simple to make (not to mention being very healthy)! I've made it many times now and it has become a staple dish in my home. As other reviewers have said, I would suggest using less barley (3/4 cup)- mushrooms also are lovely in this if you like them. Don't be afraid of the spices/Worcestershire sauce- they taste great together! I highly recommend trying this one out. Enjoy!

Sauerkraut Salad

This is a great, simple salad that makes for an excellent snack, side dish or relish. I would suggest using only 1/4 cup of oil and far less sugar though. I used about 1 cup sugar and still found it too sweet for my taste. I think it would do fine with even just 1/2 cup sugar. I also substituted red bell pepper for the pimento. The other great thing about this recipe is it keeps for ages and still tastes great! Enjoy!
