Broccoli and Tortellini Salad

loved the recipes. I did make the following changes to it like others recommended. -blanched the broccoli -use about a ½ cup or so of dried and sweetened cranberries instead of raisins -use frozen tortellini since they are more sturdy than the fresh ones -use about ½ cup or so of sunflower seeds instead of a full cup -use about 1/3rd of a onion instead of a full onion At the end, toss the salad with about ¾ of the dressing and refrigerate. Right before serving toss the rest of the salad with the remainder of the dressing. Some people recommended doubling the dressing. I've made it twice now, once with double the dressing and another time with with slightly less. Both times I still had too much dressing left over. I would stick with the original amount of dressing on the recipe.

Suki's Spinach and Feta Pasta

Loved It! My son is a pasta critic and he really liked it too. I used more olive oil as when I added the mushrooms and spinach it wasn't moist enough. I didn't add the tomatoes until the very end after I had already mixed in the pasta and this kept the tomatoes from getting too mushy. Will definitely make it again.

Apple Bacon Tomato Soup

I followed previous reviewers suggesting of making it a day before serving it. After tasting it the next day I felt it was just okay. I decided to puree it to see how it tasted, it was better. The flavors were better combined. I still thought it was a bit on the acidic side so I added approximately 1/4 cup of cream. This helped to tone done the acidic taste. My dinner guests were split on who liked or disliked it. Out of 6 only two really liked it. The consistency was that of pumpkin soup. The wine taste seemed kind of strong. Overall, I would give the recipe 3 stars but after adding the cream and pureeing it I would give it 4 stars.

Ultimate Roast Beef Blues Sandwich

Loved It! There were a few things I did differently. I used Feta instead of Blue Cheese, sauted some mushrooms in butter and cut the fresh basil into strips. I then put everything on the crunch bread roll. We'll be making this again. Thanks for the recipe!

Great Green Salad

I thought this recipe was just fair. My son loves salads and he and I both agree the dressing was a bit on the bitter side. Dressing wasnt any better than one you could buy in the store.

I thought this recipe was just okay. I think my family would have liked it better with a much more mild tomatillo salsa. The only tomatillo salsa I could find was quite spicy.

Baked Scallops

Didnt like this at all. It was the first time I have tried scallops. I used the Bay scallops. They came out gooey even though I baked them as directed. Not a recipe I would try again.
