Lori's Spicy Chipotle Lasagna

I have tried many, many, MANY lasagna recipes in my time, and this is hands down my favorite of all time! I did use the chipotles in adobe sauce - about four I believe and it added just the right amount of heat! YOU MUST try this recipe! It is work but so completely worth it! Only thing was - nine lasagna noodles did not quite make enough for three layers, so it was more like two and 1/2 layers - it doesn't matter! YUMMMMMMMM!

Italian Taco Salad

We make something similar. We brown chicken, then shred it and mix with taco seasoning. Then in a bowl, layer lettuce, black beans, grated Mexi cheese (not too much), the warm seasoned chicken, chopped red onions and crushed tortilla chips. For dressing, try the Hidden Valley spicy ranch dressing - fabulous!

Carrot Pineapple Cake I

My husband LOVED this cake. Really good. I do think it would be improved by the addition of some golden raisins, just needed that little extra, and double the frosting. Make sure cake completely cool before frosting, because it is so moist, it will crumble. Yum yum yum, thanks!

Slow Cooker Beef Stroganoff II

This was good, but modified like everyone else. First, cooking on HIGH for 8 hours made the meat fall apart too much, I'll try on LOW for 8 hours next time. Also subbed beef stock instead of water. Very good.

Broccoli Beef II

Really good with a few changes. First, use a tenderizer for the meat, and marinate longer - overnite would probably be good. Triple the marinade and add to the final dish. I added hoisin sauce to the marinade in equal part to soy sauce for more depth of flavor. Thanks for the recipe. The bouillon added to the noodles is genius!

Chicken Tortilla Soup V

So simple and sooo good. I had a cold and wanted a chicken soup - this was perfect. I agree with another rater who said first saute the onions with the garlic and spices, boil the chicken and then shred when cool. Use a less chunky salsa like on the international aisle and use chicken stock, not broth, two large boxes. Doesn't need the sour cream or chips in my opinion, but add some cut up cilantro right before serving. Delicious and low cal, cleared my sinuses!

Baked Pesto Chicken

I marinated my chicken in the pesto for about 4-5 hours. I then topped it with some chopped oven roasted tomatoes instead of fresh and a small amount of grated mozzarella. Excellent - and makes a great sandwich the next day too. Thanks!

Butter Bean Burgers

These are great. My husband and son (non-vegetarians) love these. I wouldn't put them in the food processor, makes them too mushy and don't hold together well. Just mash the butter beans up lightly(get pre-seasoned ones, more flavor) and add the other ingredients. After forming them, coat in cornmeal and put in the fridge for about and hour. They should hold up well that way. I like them without a bun, but my family likes with vidalia onion, a little mayo and mustard. Yum!

Chipotle Guacamole

As this was so easy, I give it 5 starts compared to the recipe I usually use! Really good and really simple and fast to make. I used tequila lime salsa, so left out the lime and used about 1/2 tbs of chipotle seasoning instead of the adobo sauce. Excellent! Thanks!

Spinach Salad with Pepper Jelly Dressing

Really good - but I also used the hot pepper jelly which I think would be much better than the mild. Also used crumbled feta. I think some thinly sliced red onion would be good, I'll add next time.

Hearty Vegetable Soup

This is my weekly go-to soup. Easy, quick, healthy and delicious. I use frozen corn and frozen peas, and I cook the onions, potatoes, carrots and celery 1st for about 15 minutes before adding the other veggies as they cook pretty quickly. I also use fresh garlic. Rarely have the leeks, so I'll add extra celery and onions in that case.

Jalapeno Hummus

Absolutely the best hummus! But make it the night before, I thought it improved tremendously. I didn't use the crushed red pepper, it was pretty darn hot with the 1/2 c jalapenos. Love this stuff!

Chicken Parmigiana

HOLD EVERYTHING - how can this be so simple and so good. Use a very good marinara /sauce(I used a three cheese one)make sure you pound those chicken breasts, serve over spaghetti or linguine tossed in olive oil, garlic, and coating of fresly shaved parmesan, and eat the best comfort food ever. Loved it.

Asian Fire Meat

Awesome. I mixed mine with lo mein noodles. If you use the round steak, you MUST slice paper thin, otherwise too tough. Sirloin or flank may be better, but I loved this. Will make again.

Penne Pasta with Spinach and Bacon

I didn't like the chunks of tomatoes so much, but this had an excellent flavor. So easy. I like the idea of hot pepper flakes and adding the bacon grease to the pasta. I also topped with a little fresh grated parmesan. Next time, I'll probably puree the tomatoes, add a bit more bacon and more spinach to balance the pasta. Thanks!

Spicy Rapid Roast Chicken

If you like a delicious crispy skin, this is the way to roast your chicken. Moist flavorful meat. Always looking for a new way to roast a chicken. Very nice, will make this way again.

Wow. I'm not sure what I did wrong, but didn't like this at all. I think I did it as read, so I am surprised that it was such a hit with everyone else. to me, too much orzo to ratio of veggies. thanks anyway.

Roasted Red Pepper Lasagna

I really liked this. More subtle flavor than most veggie lasagnas, and lighter too without the heavier cheeses usually used, such as ricotta/mozzarella. I did find I could have used a bit more of the sauce, and although I stuck with the parmesan only, I used quite a bit more than was called for in the recipe. I don't know that everyone liked it, my husband was sort of lukewarm on it, but for me a winner.
