Portobello Mushroom Burger With Bruschetta Topping

We Loved the combination, very tasty. My hubby does not eat bread, so we did this instead; followed the recipe and as the 'shrooms were grilling we grilled 2 Turkey Burger patties as well (seasoned to taste). After heating the 'shrooms and topping we laid the burgers on top then added the cheese, we used shredded Cheddar/Jack as we are not horseradish fans. Had to cook up another batch as hubby ate his before I could get salad to the table, it smelled so good, he couldn't wait! We didn't miss the bread at all. Thanks for another way to fix up our favorite 'shroom.

Chocolate Ganache

I read this recipe over 3 times, it was hard for me to believe it would be so simple! But, I tried it and for this first timer it turned out fantastic and tasty. My crew do not like bittersweet chocolate so I used good quality semi sweet chocolate chips (1 1/2 c.) and I live in the country so my choice for the cream was liquid whipping cream. With even these differences it turned out wonderfully and my peeps all think I'm a genius! I can make ganache, whoopee!

Luck o' the Irish Brownie

These were such a hit at my feast, so glad I found this recipe, I've always wanted to try making a mint brownie. The five stars are for the brownie and mint layers, so chewy, brownie-chocolaty and the buttery mint layer rich and minty. But, I had to fool around with the top layer and made ingridvogel's Chocolate Ganache (minus Rum flavoring) instead of following the recipe. Cowabunga!! I lucked out and it was a good thing, the crowd roared (means they were very pleased). Thanks Cher and I know your top layer is very 5 stars if the other 2/3rds of this recipe is!

Irish Soda Bread

I omitted the raisins and caraway, my goal was for this bread to accompany corned beef and cabbage. But followed the rest of recipe to the letter. It came out superb! There were many happy faces munching my bread at our feast and there was even an arm wrestling mach for the last slice, what a compliment!

Slow-Cooker Corned Beef and Cabbage

I've not had much luck in making corned beef and cabbage over the years, but at last this was the recipe that worked. Meat tender, veggies not cooked to mush. It got raves at our feast. I know my crock pot, so I did get the meat with liquid (no beer), spice pkt, a few peppercorns and a bay leaf and onions going first 4hrs. Then added potatoes and carrots and more onion for 3 and the cabbage last hr. But the high setting is important, do it, and you'll get a great result.
