Tilapia Scaloppine

Good fast way to cook fish, with little effort. I left out the mushrooms and used spinach instead, and I thought it tasted pretty good.

White Chili

Very easy recipe. I used black beans, undrained, and left out the water/chicken stock - it was a little thick, but I like it better that way. I also put in some spices - cumin, chili powder, oregano, black pepper.

Brunch Egg Bake

Fantastic recipe. I made a couple of changes - used half the cheese, and placed one cheese layer on the bottom, and one on the very top. I left out the mushrooms and instead of ham, used spicy veg chorizo, which crumbled like gound turkey. Oh, and left out the basil and parsley and instead used only oregano. Received rave reviews!

Mexican Chicken I

Pretty good, but not great. Like a previous reviewer said, it seemed a bit heavy, and also seemed like slightly too much cumin to me. Next time, I will add corn, use slightly less cumin, and perhaps use chicken thighs rather than chicken breasts, for more tender chicken. However, this was a very easy and pretty tasty recipe, and used mostly very common ingredients, so it gets four stars from me. I baked it at 375 for 50 minutes, and that seemed to be just perfect.

Chorizo and Lentil Stew

Good recipe. I added 1 tsp of garam masala (for more spice), and 1 can of black beans. I think more liquid is definitely needed for it to be a stew - maybe about 5 cups.

Pretty good recipe. Well, I didn't have any taco mix so I used (and loved) Taco Seasoning I. Next time, I will definitely add anoher layer of cheese and tortillas.

Pepperoncini Beef

Easy and tasty! Nice and spicy. I thought mine came out a bit dry, but still pretty good. I used this for tacos. I have heard that this also works very well with pork, so I may try that next time.

Meatball Nirvana

Pretty good meatballs! I used turkey, so the only minor problems I had may have been because of that - the meatballs stuck to the foil a bit, and also fell apart a little too much. But the taste was excellent - nice and spicy! And I was glad that this was a meatball recipe that didn't require eggs, since we were all out.

Chicken Chili

Really good recipe! I used black beans instead of kidney beans, and used diced tomatoes instead of whole peeled tomotoes. I also left out the mushrooms and celery, since we didn't have any. It still came out well - nice smoky flavor with the paprika! Nice and easy as well.

Spicy Chicken Breasts

Really good recipe. It came out so spicy! I did it a bit differently - I mixed all the spices in yogurt and marinated the chicken in that, and then I baked it in the oven with the marinade (350 degrees, for 45 minutes). The chicken was really tender, and the marinade created sauce, which would have been nice to have with rice. I also used chopped onion and minced garlic rather than powder. I will definitely make this again!

Best Baked Chicken

I really liked this recipe. I marinated the chicken in the sour cream mixture (although I substituted yogurt) like previous reviewers. The chicken turned out really tender and juicy. I also used garlic powder instead of garlic salt and left out the celery salt. Great, easy chicken. Only four stars because it wasn't very spicy, but it's not really meant to be.

Easy Lasagna III

Very good recipe, but it seemed like it would be a bit bland for me. I altered it a little - I sauteed the meat (I used turkey) with red onions and garlic, and added a bit of oregano and chili-garlic sauce. I also combined the pasta sauce and meat layers. It came out very tasty!

Easy and Delicious Chicken

Tasty and easy recipe. I cut the chicken breasts into cubes, and used slightly less Italian dressing and added chili-garlic sauce and hot sauce in its place. And I used 3/4 of the cream cheese. Turned out great - I served it over whole wheat pasta with grilled asparagus.
