About this Cook
I am a married Mother of three, and a Grandmother to one. I am transplanted to south, where there is not nearly enough ethnic food for me. So out of need I learned to make my own. I love my job in the hospital where I work full time as a Nurse, and If I hit the lottery...There is no doubt i'm quitting and moving to the caribbean :) We frequently entertain and my 18 & 15 year old boys are both falling in love with cooking. I am happy to have their help as everything in my kitchen is unisex operational.

I love ethnic cooking. Greek, Italian, Polish,Asian,Mexican.
My favorite family cooking traditions
At Easter we make homemade pierogi, so many the entire dining room table is full of them!
My cooking triumphs
Learning to master phyllo dough! Baklava is a standard for the holidays .
My cooking tragedies
I remember my first cherry pie(I was 8 )...I forgot the sugar, my Dad never said a word except how good it was. :)

Spanakopita II
This was a good recipe. 4 stars only becase I made changes. I used 2 eggs and NO oil, (I used only about a tablespoon to saute garlic/onion) No flour, I aslo added a 12 oz container of cottage cheese. Saute garlic & onion in olive oil. Mix into spinach (I squeeze dry in a paper towel). Beat eggs add Cottage cheese, mix add feta. Mix cheese mixture with spinach mixture. Use a rubber scraper to get onions mixed in well. start by brushing pan with melted butter, add a sheet of phyllo dough, build from there. Reserve about 6-8 sheets of dough for top. Slice on a diagonal about 1/2 way through, prior to baking. 40 mins should be perfect~

Tres Leches (Milk Cake)
Wow! This is sooo good. We chose not to frost this cake(it is very rich without it). Instead we topped it with a dollop of fatfree coolwhip.

I use a jelly roll pan for these, the sides are higher than a cookie sheet. You can change them up with different chips, nuts or whatever! Not that these need anything. They are always a hit and you're sure to bring home an empty plate!
