Baked Asparagus with Balsamic Butter Sauce

We really loved this. Browning the butter gave it a real caramel-y flavor. I added the vinegar and soy sauce and let it thicken a bit while stirring continuously. Delicious!

Mimi's Zucchini Pie

I L-O-V-E this recipe! It is sooooo easy and yummy. I add extra parmesan on top b/c I like lots of cheese. I also use seasoned salt instead of regular salt. I highly recommend this one!

INCREDIBLE! I served it over mashed potatoes and we loved it! It's a new favorite, for sure. I did make two small changes...added garlic and used diced tomatoes instead of stewed. Thanks for the terrific recipe!

Gingered Pepper Steak

We love this recipe! We save time by getting a fajita veggie mix of pre-cut onions and red/orange/yellow/green peppers at the grocery store. It's colorful and so tasty! We also use fresh ginger. Mmmmmm!

Jimmbo's Garlic Knots

L-O-V-E these! I used all the garlic called for and thought it might be too much, but it was perfect! I also used grated Parmesan and fresh basil (in lieu of parsley). I rolled the knots in this mixture prior to baking and they were delicious...crispy on the outside and soft inside. Very garlicky and SO FABULOUS!

Tomato Spinach and Basil Soup

I added lots more garlic and spinach than the recipe called for. I also added chicken broth and some half and half so it was much creamier. It was especially good topped with Parmesan cheese.

Easy Alfredo Sauce III

I used this recipe because I had all of the ingredients on hand. Perhaps I did something wrong? It ended up chunky with bits of egg in it, reminiscent of egg drop soup. I ended up pureeing it in the blender, which helped at first but then the sauce separated again once it was mixed with the pasta.
