Couscous, Cranberry, and Feta Salad

This was surprisingly delicious! I used a whole box of couscous but only about half of a cucumber. The cranberries gave it a perfect amount of tart sweetness and the feta balanced it all out. I tried this warm, without the dressing and it was amazing. I served it cold, along with butternut squash soup and applebutter glazed pork loin and it was amazing! I made my own balsamic vinaigrette that I drizzled on top after serving it so that it didn't drown and overpower the flavor of the couscous. It was eaten by all but 1 of my 5 kids and the adults all had seconds. This will definitely be a regular on my menu.

Fresh Southern Peach Cobbler

Absolutely delicious! This was easy to make, and was a hit. I served this as dessert after a very "autumn" dinner and it went perfectly. I put extra cinnamon and sugar on top and cooked it about 35 minutes until it got nice and dark on top.

Pina Colada Rum Cake

My boyfriend asked for a cake with coconut in it for his birthday. As he ate his first piece he said "this is better than I could have imagined". This cake is so easy to make and so delicious (coming from someone who doesn't like coconut). I used regular rum and next time I think I'll use coconut rum to add to the flavor. Definitely could have used a little more frosting but it wasn't too dry or lacking. Will definitely keep this on file for something fun to make.

Southwest Chicken Bake

I used this to start and changed the recipe a bit. First, I cooked the rice with Sazon seasoning to add more flavor. I also would suggest using more chicken. I used 1.5lb. and I thought the amount of chicken compared the the rest of hte ingredients wasn't enough. The combination of the taco seasoning and italian dressing was delicious! My boyfriend and kids told me that I could have just served the chicken and they would have been thrilled. I used about 4 tablespoons of dressing and a whole packet of seasoning. I also put in plain diced tomatoes in addition to the salsa. Most of my meals are from scratch and the family has really loved my dinners lately but last night I was told that this was the best dinner in a long time. So, this will earn a permanant spot in my dinner ideas.

Quick Pickled Jalapeno Rings

Very easy to make. I don't eat jalapenos but I grew a few plants for the rest of the family. We were overflowing with jalapenos and this recipe helped preserve them to use throughout the year.

Banana Banana Bread

This is a no fail recipe. Cooks perfectly and I get compliments on it every time. My family of 7 easily eats a loaf in one day and beg for more.

Roasted Butternut Squash Soup

This soup was delicious! I used extra onions, celery, and carrots and I used more half and half to make it creamier and it was perfect. I didn't use coriander and next time I'll skip the pumpkin seeds but the panko gives this soup just enough texture. This reheated well, without having to add more broth, for days.

White Chocolate Macadamia Nut Cookies II

Great recipe! This was the first time I've made these so I don't have much to compare it to but the cookies were delicious. Followed the recipe except I used half a bag of white chocolate chips instead of a half cup. I was able to get 39 cookies out of the recipe as it was, I'll definitely double it next time. I baked them for 10 minutes and they were golden brown but still soft.

Amish White Bread

This bread was so easy to make. Mine took a little bit longer to rise. I actually sat it on a wire shelf about a foot above a heater vent. I got 2 great looking loaves that tasted just as delicious. My 10 year old son asked me to stop buying bread at the store and just make this.
