My favorite family cooking traditions
My grandmother was an amazing baker. She always had the best holiday treats. I grew up wanting to bake like her. Baking is obviously my love but, being a mother to 5 children, I've expanded my cooking skills and abilities. I love being in the kitchen and creating something that people love. I cook and bake enough for a small army so extras are always welcome in my home and leftovers often leave with them.

Couscous, Cranberry, and Feta Salad
This was surprisingly delicious! I used a whole box of couscous but only about half of a cucumber. The cranberries gave it a perfect amount of tart sweetness and the feta balanced it all out. I tried this warm, without the dressing and it was amazing. I served it cold, along with butternut squash soup and applebutter glazed pork loin and it was amazing! I made my own balsamic vinaigrette that I drizzled on top after serving it so that it didn't drown and overpower the flavor of the couscous. It was eaten by all but 1 of my 5 kids and the adults all had seconds. This will definitely be a regular on my menu.

Fresh Southern Peach Cobbler
Absolutely delicious! This was easy to make, and was a hit. I served this as dessert after a very "autumn" dinner and it went perfectly. I put extra cinnamon and sugar on top and cooked it about 35 minutes until it got nice and dark on top.

Pina Colada Rum Cake
My boyfriend asked for a cake with coconut in it for his birthday. As he ate his first piece he said "this is better than I could have imagined". This cake is so easy to make and so delicious (coming from someone who doesn't like coconut). I used regular rum and next time I think I'll use coconut rum to add to the flavor. Definitely could have used a little more frosting but it wasn't too dry or lacking. Will definitely keep this on file for something fun to make.
