Roasted Winter Vegetable Soup

Reviewed: Feb. 25, 2007
Delicious. A great way to use winter root vegetables. The balsamic vinegar adds a nice zing and contrasts well with the richness and smoothness of the roasted vegetables. Try throwing in cloves of garlic (in skin) to the roasting vegetables, as well as an onion. Add or substitute a few carrots or maybe some celeriac.

Beetroot Hummus

Reviewed: Feb. 25, 2007
I still prefer regular hummus, but this one's an interesting change and a new way to use beets. I enjoyed the slight sweetness that the beets add. The colour is amazing (it would look great side by side with guacamole, or layered in a glass bowl with guacamole and regular hummus). With the garlic, tahini, lemon juice, cumin, and s&p, I just added to taste as I blended (start with a little and go up from there) to get the flavour I like. I might cut back the amounts by half next time, as this recipe makes A LOT if you're just making it for yourself! I wouldn't reccommend this to strict hummus traditionalists because of the sweetness and flavour difference the beets add, but for people who like to mix it up a little - give it a try!

Traditional English Muffins

Reviewed: Feb. 25, 2007
A good recipe - not quite as spongy of a texture as store bought English muffins, but the flavour is much better! The texture I achieved may in part be due to my use of whole grain flour. The crust was crisp and chewy and the muffins split a little during baking. I halved it when I made them - and it still turned out 18+. They are a little on the sweet side, for my preference. I'll probably cut back a little on the honey the next time I make them. I may experiment with other sweetners (molasses, maple syrup) for a subtle flavour difference. Overall - a decent recipe. I'll be using it again.

Kreatopita Argostoli

Reviewed: Mar. 17, 2007
Delicious! I used ground lamb instead of cubed, and brown rice instead of white. The flavours were just right. A very satisfying dish worth the effort. Great with a fresh garden salad on the side.

Korean Tofu and Vegetable Soup

Reviewed: Apr. 15, 2007
I spent a year in Korea teaching English and doenjang jjigae was one of my favourite meals. It's so easy to make, as long as you can find the soybean paste. This recipe doesn't taste quite the same as what I had in restaurants in Korea, but it's still satisfying.

Chicken Tikka Masala

Reviewed: Feb. 10, 2008
This was really, really, really good. I paid heed to the previous reviewers suggestions - cut the salt way down, spiced according to my preference, and broiled the chicken in the oven. I was very satisfied with the results and will make this again.

Good. Will use coffee instead of water next time as suggested in other reviews to richen the flavour.

I've used this recipe many times. It always disappears quickly. I've made it successfully as a loaf, a cake and as muffins.

Nanaimo Bars III

Reviewed: Mar. 9, 2008
I prefer making this recipe in a 9x9. The final product is a little thinner and easier to cut. Due to the thinner pieces, the richness of the bars isn't so overwhelming. Other than that personal preference, fantastic recipe! I've used this recipe for my Christmas baking for the past 3 Christmases and almost always get requests for the recipe from people who try them.

Hamburger Minestrone

Reviewed: Mar. 9, 2008
This was good. Nice and filling. Sprinkle a little parmesan on top. I cook the macaroni seperately and put it in the soup bowls before I ladle soup in. This prevents the pasta from becoming mushy in leftover soup.

Korean Cucumber Salad

Reviewed: Mar. 9, 2008
It was okay, but it wasn't like any of the cucumber salads I ate while living in Korea.

Kheer (Rice Pudding)

Reviewed: Mar. 9, 2008
I first made this about 3 years ago and am finally getting around to reviewing it. This is a great recipe. I haven't had authentic Kheer, but this is great. It is nice and creamy and not too sweet. A great combination of flavours. It's great warm and just as good cold. It sets when it cools. Now, when I want rice pudding, this is what I make. The rice to liquid ratio in this recipe is just fine. Don't change a thing.

Autumn Apple Tart

Reviewed: Mar. 9, 2008
This tart is beautiful and delicious! A perfect autumn treat. The crust is rich and buttery and is a great contrast to the tart, yet sweet and spicy apples on top. The apples and topping basically caramelize while baking and the final result is mouthwatering! I used 6 medium apples and had a lot left over (maybe 3-4 would have been enough), but perhaps I didn't layer them thickly enough. UPDATE: 4th year in a row making this, it's become an autumn fixture. Soooo good!

How about changing the name to DISAPPEARING Plum Cake?!? This always disappears the same day I bake it. Delicious.

A satisfying combination of chocolate, vanilla custard and cake. I just used chocolate ganache instead of the glaze.

Baked Teriyaki Chicken

Reviewed: Mar. 16, 2008
I'm changing my rating to 5 stars. I've made this 2x now, and both times to rave reviews. The second time, I made the sauce in advance, cooled it and put it in the fridge waiting for a night when I needed something fast. I baste the meat with the sauce, and I also add it to the stir fry veggies. Excellent. Thanks for the recipe.

Spicy Garlic Lime Chicken

Reviewed: Mar. 17, 2008
This was pretty tasty. I was tired of chicken, so I tried it with pork chops- very good. I rubbed the pork with the spices first. Next, mixed the oil, lime juice, melted butter and second amount of garlic powder in a glass 9x9 baking pan, added the pork, coating both sides in the sauce, covered the pan with foil and baked for 30 minutes. The pork was very tender and the flavour had just the right balance between tangy and spicy. This would be excellent on the grill - pork or chicken and vegetable kabobs in this mixture of spices and the lime/garlic/butter basting sauce. Excellent recipe. UPDATE: Couldn't get limes at the store and used lemon juice instead. Still pretty tasty. I've made this many times and it always gets favourable reviews.

Calabacitas

Reviewed: Jun. 1, 2008
Use the freshest vegetables you can for this recipe, as those are the flavours that really come through. This was a nice, cooling, satisfying side dish for a fajita meal. I will definitely make it again with garden fresh zucchini and corn.
