Raspberry Crunch Brownies

Reviewed: Feb. 6, 2009
Like others, I added the raspberry jam directly to the batter. I used two whole eggs instead of four whites as I wasn't so concerned about cutting down on fat. I made the brownies in a muffin tin instead of a 9x9. They came out a little cakey and not as dense as I'd have liked, but were probably in the oven too long. Still delicious! A nice raspberry chocolate flavour and fragrance. No Grape Nuts on hand, so I'll be topping them with walnuts and a chocolate glaze. Good recipe :)

Teriyaki Marinade with Ginger and Garlic

Reviewed: Jan. 20, 2009
A tasty, quick to throw together recipe. The only thing I did differently was substitute brown sugar for honey. I used it on beef, sliced up for stir fry. On the side I added some cornstarch to the marinade, cooked it, and added it to the stir fry beef and veg. The marinade was good with the beef, when thickened, made a good stir fry sauce. I like the Baked Teriyaki Chicken recipe from this site for chicken.

Tomato Soup III

Reviewed: Jan. 15, 2009
Really good smooth tomato vegetable flavour. I followed the recipe almost exactly and added some soya protein to make it more of a 'hamburger' soup. Very good. Will make it again.

Carol's Arroz Con Pollo

Reviewed: Jan. 10, 2009
Good base recipe but not spicy enough for my liking so I took the suggestions of others and added chili powder, cumin, and hot pepper sauce to give it more kick. I also added some frozen peas and some lime juice. I made it all in one pot and kept adding ingredients as suggested by other reviewers. I used brown basimati rice, so doubled the cooking time. I'll make this again with the modifications and will either use less liquid or add more rice to make it a little drier. Easy one pot meal.

Moroccan Lentil Soup

Reviewed: Jan. 10, 2009
This is a nice warming vegetarian soup with some substance to it. I followed some of the suggestions of Serena from a previous review (used mostly brown lentils, omitted cardamom). I used her recipe for the Ras El Hanout spice mix and substituted that for the garam masala. I didn't bother pureeing half of the soup in the blender. It was thick enough as is - more of a stew than a soup. I will make this again.

Bigos (Hunter's Stew)

Reviewed: Jan. 8, 2009
Good recipe. A previous roommate of mine was Polish and made a variation of this often. Great on cold winter days with fresh bread.

Canadian Butter Tarts

Reviewed: Dec. 12, 2008
Not quite the butter tart I was expecting, but still good. I used my own pastry recipe as I thought this one was a little heavy on the shortening for my taste.

Sauceless Garden Lasagna

Reviewed: Dec. 3, 2008
Excellent variation on the usual lasagna. I also like that it's only a 9x9 - great for singles and smaller households. I had no problems with the no-cook noodles. This lasagna was very juicy so I followed the reccommendations of other reviewers and let it sit for 15+ minutes. The balsamic vinegar is great with these ingredients.

Greek Lentil Soup (Fakes)

Reviewed: Nov. 23, 2008
Lovely! This is a great combination of flavours and the vinegar accents ties all of the flavours together wonderfully. Very easy to make. Great recipe as is. UPDATE: In my opinion, this soup is best when it's fresh and all of the subtle flavours are still distinct and fresh. It's still good the day after, but it tasted best right after cooking.

Good. I also decreased the sugar as some other reviewers have done.

Taylor's Piroshki

Reviewed: Nov. 9, 2008
A nice accompaniment to the Russian Potato and Mushroom soup from this site. A great marriage of savoury flavours in a tender bread pocket. I baked mine. I'm sure they're even better deep-fried. The dough was very nice! Very tender. I made half the batch with a sauerkraut/Hungarian paprika sausage mixture for variety. This dough is the perfect wrapper for whatever savoury filling one might like to put in it, authentic or not.
