Traditional Pita Bread

All of the pitas puffed up nicely for me. I used 1/3 AP flour, 1/3 whole wheat flour and 1/3 spelt flour. I would make this recipe again.

Zucchini Brownies

Reduce sugar by 1/2 a cup and were still sweet enough for me. Very easy to mix up and a nice alternative to the usual zucchini cake. If the zucchini is shredded really finely, it virtually melts when baked.

Pretty tasty. I held back on the heat (didn't add the jalapenos) and used only two cans of beans because my pot isn't big enough for more. Love the smokey heat that the chipotles give it.

I skipped frying the potatoes to save time. Just sliced them thinly and layered them on top. I had no problems with dryness or blandness like a few others have mentioned. This was really easy to throw together. I served it with pita instead of over rice. Tasty! Thanks for sharing!

Rhubarb Ketchup

I wouldn't really call this ketchup, but it's really good. I reduced the sugar by half and it was still pretty sweet. I might reduce the sugar even more the next time. Looking forward to using this as a BBQ sauce on chicken, pork and ribs. I also like it with eggs. A great new way to use rhubarb.

Lemon Fluff Cake

Yum! I made this as cupcakes to decorate for Easter. I added the zest of one lemon in addition to the lemon extract and I think the flavour is just right. I also reduced the sugar by about 1/4 cup. One recipe made 24 small cupcakes (2.25" diameter) and 24 mini (1.75" diameter). The texture and taste is similar to angel food cake, but not quite as light. I'm happy to have found another recipe to use up egg whites. I will make this again.

These were easy to make, but I thought that the cumin overwhelmed the flavours. I would rather taste more garlic. For all the garlic that was in here, I didn't think the flavour stood out.

Ajiaco (Beef and Pepper Stew)

I didn't follow this recipe exactly. I wanted to make this, but didn't have any roast beef, so I browned cubed stewing beef, removed that from the pot, then followed the recipe. Because it was stewing beef I had to simmer it for quite awhile to tenderize it. I didn't add potatoes. The flavours were really good.

Crispy Vegetable Pakoras

These were good. Not sure if it was just the particular brand of chickpea flour I used, but it seemed coarser than what I have had at restaurants. As many others have stated, very adaptable. I subbed potato for cauliflower. Salt the batter to taste.

These were good. I used only 1/2 cup sugar and 1/3 cup oil and we thought they were sweet enough. I can't imagine 1 cup of sugar. Will try making them with butter the next time.

Grandma's Gingerbread Pancakes

Pretty tasty alternative to regular pancakes. Based on other reviews, I increased the baking powder by 1/2 tsp and used only 1 cup of water. My pancakes were thick and fluffy. I also used whole wheat flour. They weren't very sweet, but had a nice spicy flavour. They'd be really good with apple sauce. Also, for some reason they seemed a bit more delicate than regular pancakes, so I had to be quite careful when flipping them.

Authentic German Bread (Bauernbrot)

This is some of the best bread I've ever made. Excellent texture and crust. Good flavour too. I halved the recipe and it still made 2 big loaves (appx. 1.8 - 2 lbs/each).
