Cheesy Quinoa Pilaf with Spinach

Stuffed Peppers My Way

These are fantastic. My peppers slumped a bit. Next time I try these I will either cook peppers for 20 mins or i will just cut the top of the pepper and stuff the whole pepper. These will be a regular fixing in our household. They are wonderful!

Apricot Lentil Soup

REALLY GOOD!! this is a great recipe for lentils. i used green lentils, doubled the spices, used cherry tomatoes seeds and all, and doubled the lemon juice. Don't skip the lemon juice because it really adds a great flavor. i also used 1/2 cup of apricots and chopped them up in my bullet to very small pieces..it worked perfectly. Lastly, I did puree 1/2 the soup in my bullet just before serving and found that to be very important to give the soup some body. i will be making this recipe for many more dinners!!! loved it!!

Spaghetti Squash I

wow...this was really good and healthy. I topped it off with Parmesan cheese and loved it! Next time I cook it I will cook the squash in the microwave for a few minutes to make it easier to cut.

Zucchini Brownies

wonderful! my curiosity led me to give these brownies a try and i am so glad i did. i didn't make the frosting and they were delicious without it. next time i will try to add more flavor by adding a shot of Kahlua. they did come out a tad cakey but i don't mind that. i doubled the walnuts and shredded the zucchini very fine.

Fresh Asparagus Soup

WOW! I could barely put my spoon down. This was outstanding. I didn't have soy milk so I used half and half. Also, I don't own a blender or immersion mixer so I pureed the asparagus in my bullet...worked well enough. I served it with toasted rye bread. Delicious!

Dog Treats I

It's a hit! I followed recipe exactly only I added a scoop of peanut butter. I didn't have a cookie cutter so I just rolled the dough and sliced. After the cookies were cooled I placed one next to the usual treat (store bought dog biscuit) and she went straight for these and never looked back!

Best Big, Fat, Chewy Chocolate Chip Cookie

Delicious! I used splenda brown sugar, real butter, 1 cup of chocolate chips, and walnuts. Next time, I will add coconut to recipe. Also, in my oven, I only needed to cook these for 14 minutes for perfect gooey, chewy cookies.
