Banana Banana Bread

This is a decent Banana bread recipe. We all ate it and enjoyed it, but for me it falls short of the best. It was a tad bland. We did have to cook ours for 5-10 additional minutes like some of the other posters have stated.

Spanish Slaw

I used 3 cups red bell pepper which made a very pretty and delicsiou salad. In the dressing I substituted 3 of the 4 tsps of sugar with spenda and it was fantastic. I stored the salad and dressing separately in the refrig and combined them for one serving at a time. Gave my weekly menu a nice variation and taste treat.

Eggplant Parmesan II

I made fresh bread crumbs with garlic and onion powder which made the crust extremely fresh and delicious. My teenage daughter and I enjoyed cooking this one together and she likes lots of sauce. We plan to make it again for her birthday.

This is great, but I did change the recipe up just a tad. In place of the fruit juice, I used skim milk w/ a tad of fatfree vanilla pudding mix. All else remained the same and we loved it as well as the idea of getting in our vegies.

Black Beans a la Olla

Best Big, Fat, Chewy Chocolate Chip Cookie

Delicious! I used splenda brown sugar, real butter, 1 cup of chocolate chips, and walnuts. Next time, I will add coconut to recipe. Also, in my oven, I only needed to cook these for 14 minutes for perfect gooey, chewy cookies.
