About this Cook
I like to experiment in the kitchen and cook with my 6-year old son. I love tomatoes! I can make great soup and chili, but so far, am a terrible baker. I'll keep trying.
My favorite things to cook
Soup. Anything with cheese and tomatoes (caprese, bruschetta, pasta). Huevos Rancheros. Thanksgiving dinner. Risotto. Anything with eggs. One-pot meals.
My favorite family cooking traditions
Using herbs and veggies from our family's gardens, eggs from my family's chickens and beef from my family's organic, grass-fed cattle ranch. Making Huevos Rancheros when we're on vacation. Getting help from my sous-chef, Jacob.
My cooking triumphs
Paella, cooked with The Hubster outdoors over an improvised fire pit/grill. I once cooked an entire Thanksgiving meal without electricity. We were at our family's mountain "cabin" type house, and I used a woodburning stove, gas stove, and served by candlelight.
My cooking tragedies
Most of my baking attempts end in tragedy. I've dropped cakes on open oven doors, into mixing bowls of soapy water in the sink. I've had bread turn out as bricks. I usually get questionable results when I try to sub in healthier ingredients.

Basil and Pesto Hummus
Delicious, unique hummus. I had some fresh basil to use up and this was a great use for it. Like other reviewers, I added some lemon juice, plus a little extra oil and water to achieve a smoother texture. I also added a dash of hot sauce for a little added dimension. Thanks, Dan, for an easy and tasty recipe!

Strawberry Ice Cream
After searching around for a recipe that I had all the ingredients for, I decided to give this a try as a test for the KitchenAid mixer ice cream bowl + attachments that a friend loaned me. I was skeptical about the corn syrup, but the flavor of this coming out of the freezer bowl was really tasty. Like other reviewers, I reserved some the berries and just rough-chopped them and tossed them in at the end to add a textural element. Fabulous!

Quick Creamy Potato Soup
Easy and tasty. Wonderful combination of flavors. I took the suggestions of other reviewers and added some celery and some shredded cheddar cheese. I also used green onion in place of 1/2 of the onion. Some additional seasonings also thrown in: a little bit of rosemary, some celery salt, and garlic salt. This soup thickens nicely as some of the potatoes dissolve when cooking...very nice texture. Perfect "cold weather food." I garnished with chives.
