Strawberry Spinach Salad I

Reviewed: Dec. 19, 2000
This salad is as pretty as it is tasty. I made this salad for our department's Christmas spread, and everyone loved it and wanted the recipe. I used cranberries instead of strawberries and the dark green leaves with the red cranberries looked very festive. I also toasted the almonds and used less sugar than the recipe calls for (about half). I plan to make it again on Christmas Day for my family.

Brown Sugar Meatloaf

Excellent meatloaf. I will start using this recipe for meatloaf, but I will use less sugar next time - a little sweet.

This roast was very easy to prepare, but bland and not very tender. I did exactly as the recipe instructed. ??

Caramel Pound Cake

Reviewed: Dec. 23, 2001
This cake tasted great right out of the oven, and the frosting was great, but the cake was pretty dry and hard the next morning. The directions were VERY confusing.

Kentucky Butter Cake

Reviewed: Dec. 24, 2001
WOW! This cake is awsome! This is the second cake that I baked from scratch, and I can't believe I actually made it. I tried another cake recipe the night before, but it was not very impressive at all, so I decided to try one with better reviews. This cake came out PERFECT - no problems at all. I will definitely be making this one again - real soon1

Rory's Most Wonderful Corn Bread

Reviewed: Jan. 11, 2002
This cornbread was very good and easy to make. A co-worker made this cornbread for a spread recently, but this tasted much better than the one she brought to the spread. I will definitely make this again.

Cheddar Bay Biscuits

Reviewed: Jan. 19, 2002
These biscuits are very good, but the ones from RL are much better. They were too salty and to much garlic, so I fixed them again with less salt and garlic. I also used more cheese.

Apple Enchiladas

Reviewed: Jan. 26, 2002
Very delicious and very EASY. My 13 year old son says I should make these "over and over", and he NEVER says that. I will add a few raisins to the inside and sprinkle chopped pecans on top the next time, as other viewers have suggested.

Angel Chicken Pasta

Reviewed: Apr. 25, 2002
Very good. As others suggested, I doubled up on the sauce, but did not find this dish salty at all. I only wished I would have added more salt to the pasta. I also used bow tie pasta. After cleaning his plate, my husband said, "This is good." That is rare. My two year old also loved it. I will fix this again and again.

Six Can Chicken Tortilla Soup

Reviewed: Jan. 25, 2003
Extremely easy and very tasty. Everyone liked this soup. My husband prefers thicker soup, so I followed the advice of other raters reviewers and used 1 can chicken broth and 1 can of cream soup (I used fiesta nacho cheese cream soup instead of chicken - yummy!). I plan to try it with 2 cans of broth as well.

Fantastic Black Bean Chili

Reviewed: Jan. 29, 2003
This chili was OKAY. It was rather bland. If I make it again, I will double the spices, as another reviewer has suggested.

Alfredo Sauce

Reviewed: Feb. 6, 2003
Tasted great! The cheese was difficult to melt and made the texture a little gritty. I will definitely make again, but with less cheese as others have suggested.

Kentucky Pecan Pie

Reviewed: Mar. 28, 2004
Other than being too sweet and rich for my taste, this pie was very very good. Unlike some reviewers, it did not take mine as long to cook. It actually overcooked after 60 minutes, so I baked another one for 50 minutes and with a little less sugar (2/3 cup) and less butter (2 1/2 TBSP). It probably could have come out after 45 minutes cooking time. This recipe is definitely a keeper.

Caramel Pecan Pie

Reviewed: Aug. 7, 2004
Heavenly pecan pie! I used 1/3 cup brown suger instead of the 3/4 cup white sugar, as I don't like really sweet deserts. Also used deep dish pie crust. I have tried other pecan pie recipes, but this one is way better than all others I have tried.

I have used this recipe several times. Other than reducing the oil to 1/4 cup, I follow the recipe exactly. It's hard to stop eating this cornbread - very tasty.

Buttermilk Pie IV

Reviewed: Nov. 28, 2004
Very sweet, yet very good. I have used this recipe several times. It's very easy to make. My 12 year old niece has asked me to make one for her birthday! As one of the other reviewers mentioned, low fat buttermilk does not work, unless you add a teaspoon of cornstarch to the mixture to thicken it.
