Pizza Casserole

Following the recipe as is leaves it a little bland and boring, thus the three stars, but it is VERY good if you add salt, extra sauce, more cheese to the middle and anything else you like to eat on a pizza (mushrooms, olives, etc). I also tried it with Alfredo sauce once because our guest was allergic to red sauces, and it was very good too.

Downeast Maine Pumpkin Bread

I cannot believe how wonderful this turned out! I normally have to wait every year at Christmastime for my co-worker to make her famous pumpkin bread loaves and pass them out. Not anymore! I never even considered attempting to make pumpkin bread, until my daughter brought a pumpkin home from school, and I promised her we'd make "something" with it. So instead of canned pumpkin, I used fresh pumpkin. Other than that, I followed the recipe exactly. I only wished I had remembered to add pecan or walnuts. It took a little longer for all three loaves to cook, about an hour.

Buttermilk Pie IV

Very sweet, yet very good. I have used this recipe several times. It's very easy to make. My 12 year old niece has asked me to make one for her birthday! As one of the other reviewers mentioned, low fat buttermilk does not work, unless you add a teaspoon of cornstarch to the mixture to thicken it.

Homesteader Cornbread

I have used this recipe several times. Other than reducing the oil to 1/4 cup, I follow the recipe exactly. It's hard to stop eating this cornbread - very tasty.

Caramel Pecan Pie

Heavenly pecan pie! I used 1/3 cup brown suger instead of the 3/4 cup white sugar, as I don't like really sweet deserts. Also used deep dish pie crust. I have tried other pecan pie recipes, but this one is way better than all others I have tried.

Kentucky Pecan Pie

Other than being too sweet and rich for my taste, this pie was very very good. Unlike some reviewers, it did not take mine as long to cook. It actually overcooked after 60 minutes, so I baked another one for 50 minutes and with a little less sugar (2/3 cup) and less butter (2 1/2 TBSP). It probably could have come out after 45 minutes cooking time. This recipe is definitely a keeper.

Alfredo Sauce

Tasted great! The cheese was difficult to melt and made the texture a little gritty. I will definitely make again, but with less cheese as others have suggested.

Six Can Chicken Tortilla Soup

Extremely easy and very tasty. Everyone liked this soup. My husband prefers thicker soup, so I followed the advice of other raters reviewers and used 1 can chicken broth and 1 can of cream soup (I used fiesta nacho cheese cream soup instead of chicken - yummy!). I plan to try it with 2 cans of broth as well.

Angel Chicken Pasta

Very good. As others suggested, I doubled up on the sauce, but did not find this dish salty at all. I only wished I would have added more salt to the pasta. I also used bow tie pasta. After cleaning his plate, my husband said, "This is good." That is rare. My two year old also loved it. I will fix this again and again.

Apple Enchiladas

Very delicious and very EASY. My 13 year old son says I should make these "over and over", and he NEVER says that. I will add a few raisins to the inside and sprinkle chopped pecans on top the next time, as other viewers have suggested.

Cheddar Bay Biscuits

These biscuits are very good, but the ones from RL are much better. They were too salty and to much garlic, so I fixed them again with less salt and garlic. I also used more cheese.

Rory's Most Wonderful Corn Bread

This cornbread was very good and easy to make. A co-worker made this cornbread for a spread recently, but this tasted much better than the one she brought to the spread. I will definitely make this again.

Kentucky Butter Cake

WOW! This cake is awsome! This is the second cake that I baked from scratch, and I can't believe I actually made it. I tried another cake recipe the night before, but it was not very impressive at all, so I decided to try one with better reviews. This cake came out PERFECT - no problems at all. I will definitely be making this one again - real soon1
