Spicy Refrigerator Dill Pickles

I love these!!!I didn't have fresh dill, used dry. Also, not necessary to presoak the cucumbers in the brine. I just prepped my jars, added cucumber spears, threw in some whole peppercorns into each jar (about 1 tsp. per jar.) Added 1 tsp. chopped garlic to each jar, 1 tsp. red pepper flakes to each jar. Then pour vinegar,salt and sugar solution into each jar. The other reviewers are correct, cut the sugar down to 1/4 cup or they are too much like bread and butter pickles....I wanted mine to be more like claussen and they were! Enjoy!

Indonesian Satay

Very good. I did add some hot curry powder...I don't like chunky peanut butter, so I used creamy....Also, I added extra garlic...I think it would be really good with some hot pepper flakes....It was unusual and yet I really enjoyed it and so did my dinner company!

Banana Banana Bread

This is my go to banana bread. I used to triple and quadruple the recipe for a kid's summer camp kitchen I ran in Colorado. They loved it and I used up my old bananas. I also used the same recipe successfully for banana muffins. Another tip.....I freeze my overripe bananas in the peel...Just throw them in a ziploc that you keep in the freezer and when you have enough you can make bread!

Honey Mustard Grilled Chicken

I made this as a "hurry up dish" when I had unexpected company for dinner. I used honey dijon mustard cause I couldn't find my honey and added a bit of worcestershire...I also pound the chicken breasts before cooking, to tenderize and so that they are the same thickness for even cooking. Also they grill up alot quicker. Very good easy recipe that everyone, even the kids enjoyed.

Microwave Lemon Curd

Absolutely perfect....Every time....Followed to a T. I fold this into heavy cream for a cake filling for cakes that I do professionally for high end customers who ask for it over and over! You can't go wrong....

Non-Alcoholic Margarita Punch

I served these at a party where it was mostly adults but kids were present and I didn't want the liability of alcohol... I had nearly EVERYONE (adults) ask for the recipe and no one could believe that they were non-alcoholic...It was so refreshing...I was serving two different types of punch and I quadrupled this recipe and it was still the first one to be gone! I froze the concentrate mixture with the sugar and eggwhites and half of the crushed ice. When I was ready to serve, I just put the frozen mixture in the punch bowl and added the other ingredients and stirred vigourously. No need to use blender and it was still super frothy!

Juicy Roasted Chicken

great recipe. We don't buy margarine so I used butter. I also squeezed a lemon over the chicken and inside the chicken and added a wedged onion to the inside. This was really nice for a Sunday dinner

Rich and Simple French Onion Soup

Very nice flavor. I didn't have enough beef broth, so I used 2 cups of water with beef bullion....I used fresh cracked pepper. I didn't have sherry so I used a bit of dry red wine.. Even my 5 year old ate it.

Restaurant-Style Buffalo Chicken Wings

Very good. I do add extra cayenne pepper and use the hottest hot sauce I can find....(cause we are chile freaks!!!) I've baked these and have equally as good results....Oh yeah, add extra garlic (cause we are garlic freaks too!)

Boilermaker Tailgate Chili

This is a great basic chile recipe. I mix up the ingredients based on what I have on hand....If I don't have chile powder, I just add extra cayenne. If I don't have beer, I don't add it....I personally like alot more garlic, so I add lot more. Use whatever canned tomatoes you have on hand...Tomato paste, tomato sauce, crushed tomatoes, etc... If you like a thicker broth, add Masa Harina (avail. in the hispanic section of grocery store) Add about 1/4 cup to 1 cup of water and still and add to chile and bring back to boil and cook for about 5 extra minutes. Real authentic tex mex flavor by doing this.

Honey Wheat Bread I

I love love love this bread...I've done it just as the recipe reads, and got good results. However, I live at mile high altitude and increase the temp of the water just slightly. I increase the honey by a couple of Tablespoons and use an extra packet of yeast.

Rosemary Ranch Chicken Kabobs

We absolutely love this...We've served this for fancy schmancy dinner parties and everyone raved over it....Don't change anything on the ingredients....I have used red wine vinegar or balsamic when I didn't have white vinegar...Also, I've made these w/o the kabobs by just pounding the breasts to even thinness and then marinating and grilling...Just perfect!!! Perfect for company!

Too Much Chocolate Cake

I wanted to like this...But it was icky..It was heavy laden sort of like traditional fruit cake...like a brick. It was so overpowering sweet. I bake cakes semi-professionally and this is a no go. Sorry

Brunch Strata

This is absolutely excellent...I did make changes...I used 18 eggs, more cheese and more half and half...I put it all in a 12x17x2.5 inch deep pan...more veggies too...Perfect...I froze one to see how it will reheat after being frozen.

Sugar Cookie Icing

I do cookie bouquets and this is a great icing that holds up well on the cookies. I always get lots of compliments on the flavor. I do add a bit of vanilla extract along with the almond extract. If you are doing decorating and are doing another color or outlining the cookie, you MUST let the first layer dry completely before doing the additional decorating. If not, the outline or other colors will simply "melt" into the first.

Blueberry Cream Muffins

These were super fluffy and pretty just like the bakery's. They were great with a powdered sugar and lemon zest drizzle. I fed 50 people at a church breakfast function and everyone raved and asked for the recipe. You cannot go wrong with this one.

Lemon Cranberry Muffins

These were good. However, I changed the recipe from Lemon Cranberry to Orange Cranberry. I substituted orange zest for the lemon extract. I also decreased the milk to 3/4 cup and replaced the 1/4 cup with orange juice concentrate. This is a PERFECT combination of flavors...Also, I used Craisins, since i didn't have canned cranberries.
