Easy Mexican Casserole

It was pretty basic but still good. I did make a few changes to add more flavor to the dish. I cooked my ground turkey with taco seasoning and added a bit of chili seasoning as well. I think this is a must because otherwise it would lack a lot of flavor. I also used corn tortillas and omitted the sour cream to make it healthier. And to keep the flavors fresh I added the tomato and green onion at the very end of baking!

Boilermaker Tailgate Chili

This is by far the very best chili I have ever had! It touches on so many different flavors but none of which over power the dish. I use to have an old staple chili recipe but, this is the only one I'll ever make again!

Sweet and Spicy Pork and Napa Cabbage Stir-Fry with Spicy Noodles

I thought this dish was just ok. I liked the fact that it had a lot of veggies however, it was just too sweet. If I do make it again I will cut back on the sweet chili sauce and add a little more heat. Also, I thought the meat was a little dry.

Singapore Noodles

Gosh, I wish I had as good luck as everyone else did on this dish as I had high hopes. I would rate it lower but my dislike of the dish could be to the fact that I may not like curry?? The curry was sooooo over powering in the dish. Also, I didn't like the texture of the noodles, they were too mushy. Anyway, enough bashing the dish as I see many people had great luck with it!

Cha Cha's White Chicken Chili

Very, very, good! I did make some modifications due to the lack of having some ingredients on hand. I only had 2 cans of beans and no cayenne, so in lieu of the cayenne I added some red pepper flakes. Also, I did not add jalapenos because my husband can only withstand so much heat! It was very still flavorful and spicy. In order to thicken the sauce I added a bit of cornstarch! Oh, and I also added a couple tlbs of sourcream. I was very yummy!

Busy Day Chicken

I was really disappointed in this recipe. The only thing I did differently was the addition of onions in the bottom. Other then that, I followed it to a "T". The chicken was extremely over cooked to the point of being mushy. Maybe if I shortened the cooking time it would've been better. I guess it just wasn't the flavor or texture I was looking for.

Christmas Brunch Casserole

This was a great dish, nice and hearty!! Everyone loved it, it is perfect for a large group. I followed the recipe with the exception of no mushrooms, extra eggs, and that I mixed everything together as opposed to layering! Excellent :-)

Roasted Salmon with Orange-Ginger Glaze

This was great! My husband and I loved it! I followed the recipe however, I didn't have any parchment paper so I used foil. I also added some garlic and 1 tablespoon of a orange glaze sauce I had in the fridge for more flavor! Yummy :-)

Chicken and Dumplings III

This is a very tasty dish and perfect recipe for this time of year! I did have to use 1 can of cream of celery and 2 cans of cream of chicken (both reduced fat) because I didn't take out enough stock and didn't want it watery! I also added celery, onions, carrots AND lots of seasoning which added a lot of bulk to the soup and made it hearty! I would reccomend using VERY small drops for the dumplings. I tore my biscuits in 1/4's and it was still a bit doughy after simmering for 30 minutes!!! yUMMY :-)

Broiled Tilapia Parmesan

OMGosh!!!!!!! This was beyond what I expected! It was sooooooo very VERY tasty! My fiance loved it and he is not one to rave about too many of my meals :-) This is a keeper! I only made one changed and that was doubling the sauce. No way would there have been enough if I would've followed the original. Also, I didn't have celery salt so I used garlic salt.....yummy!!!!!!!!!! Thanks :-)

Broccoli Chicken Divan

This is an excellent recipe! However, I made a couple changes! Since I don't put this over rice or noodles I use about 1/2 cup of bread crumbs with a couple tlb of butter! It really has a lot of texture that way and doesn't need anything else! In order to cut down on calories I use 98% fat free cream of chicken! In the past I've also used cheese & broccoli soup and that's great too!!! Good way to get all your veggies in!

Pesto Chicken Florentine

This dish was excellent! I wanted mine a little more saucy then what the packet ended up making so I added some alfredo sauce from a jar! Then I added more pesto sauce too! It was great! I wish I would've taken the suggestion of others to add more spinach, it reduces down so much! Oh, I also added a lot of garlic, one clove would not have been enough as the chicken was pretty bland. I recommend seasoning it just a tad!

Pot Roast in Foil

This was the first roast I've ever made and it turned out great! I did however use 2 cans of low-fat cream of mushroom and 2 packets of the soup mix as the first time I made it there wasn't enough gravy!! In addition I added baby carrots (towards the end)and baby reds and it was sooooo tasty. This is for sure a favorite! Oh and so easy too :-)
