Juicy Roasted Chicken

This was my first time roasting a chicken, and I could not be more pleased! I did follow the advice of some reviewers and added a lemon and onion to the cavity of the bird; I also used garlic-pepper salt, which resulted in a flavorful, crispy skin. The meat itself wasn't salty enough, but it was so tender and juicy, it didn't matter. Everyone can just salt to their own taste this way. This is also a very economical dish; I bought a 5-pound chicken for $4.00, and it fed four people (including two BIG men!), with some left over. An added bonus: this makes the house smell better than any potpourri I've ever used!

Truck-Stop Buttermilk Pancakes

These are SO GOOD! My husband LOVES pancakes and would eat them every Saturday and Sunday if I would make them, but I'm not that big a fan, normally. I don't usually care for the texture - too dry or "packy", but the texture of these is unbelievable. Very fluffy and tender - they really do melt in your mouth. One tip - I assembled these the night before, keeping my wet and dry ingredients separate until I was ready to cook them. This kept prep time to a minimum and would make them doable even on week-days. Thanks for a GREAT recipe!

Sauerbraten I

OK, we haven't officially eaten this yet - it just finished cooking - but I couldn't wait to rate it. I followed other reviewers' advice and after marinating for 4 days, I cooked the roast in the crock pot, with all the liquid. Dinner's not for a few more hours, but I had to try a piece, and oh my goodness! The meat is AMAZING! Very tender and flavorful. Both my husband and I LOVE German food, though I've never tried making sauerbraten before. I was a little nervous, since I'm not that fond of very vinegary foods, but this is the perfect blend of sweet and sour. I'm serving it with red cabbage and potato pancakes. I can't wait. ONE warning to anyone trying this for the first time - this will smell up your whole house! I could even smell it OUTSIDE the house. I'm going to try boiling some vanilla on the stove after dinner to see if that gets rid of the smell.

Cream Cheese Frosting II

Oh, my...this is sinfully good! Far, far better the recipe I've been using for years. One note...if halved, this recipe makes exactly enough to frost a 13 x 9 sheet cake - IF you don't "sample" too much of the it before putting it on the cake!

Real Hummus

Yummy! Very creamy, with a more lemony flavor than other hummus recipes I've tried. I followed the recipe exactly, except for adding a teaspoon of cumin. That's just my personal taste, and I think it would still be delicious without it. Thanks for the recipe!

Glazed Dijon Carrots

I'm not normally a fan of cooked carrots - I much prefer them raw - but these were WONDERFUL!! I think using baby carrots makes all the difference, as the natural sweetness balances the zip of the dijon mustard and the ginger. I've recently been diagnosed with high blood pressure and am looking for flavorful, yet healthful, recipes, and this fits the bill! Wonderful! Thank you so much for the recipe!

Lemon Herb Barbeque Sauce for Chicken

I rated this 4 stars, because I figure I MUST have done something wrong, since everybody else loved it so much. It's good, but not as flavorful, or as lemony as I would have liked. I followed the recipe exactly, except I used onion powder instead of minced onion, and used a little more lemon. I marinated it in the sauce for a couple of hours. Somebody tell me what I did wrong?? The chicken is very tender, but I think that's due to my diligence on the grill, rather that my husband's "crock-pot" approach to grilling (put it on there and forget about it!)

Pork Steaks

This is SO easy, and SO good! I used some tenderized pork chops (like minute steaks) that I bought at the local grocery. I'd never seen pork like that - it must be a local thing (I recently moved to Illinois from Alabama). Anyway, I followed the recipe exactly, except I was out of minced garlic and used garlic powder instead. I would never have thought so few ingredients could make something so tasty, but it was delicious. I served it with mashed potatoes, which were delicious with the sauce over them. This has earned a permanent spot in my recipe box!

Banana Layer Cake

WOW, is this sweet! Too sweet for me, although my husband loved it. I think I'll add some salt to the caramel frosting next time, to achieve more of the sweet/salty balance I associate with caramel. Other than the excessive sweetness (which is just a matter of personal preference), the cake was very good - moist and extremely flavorful.

Shrimp Marinaders

I had something similar to this at a recent wedding, so I was very excited to try this. I used the basic recipe, but I can never leave anything alone. I taste-tested a shrimp about halfway through the marinating time, and it seemed to need a little zip, so I added the juice of one lemon, some chopped green onions, and a couple of dashes of cayenne pepper (we like spicy). Perfect! This is great as an appetizer, or as a main course on these hot, steamy days. My husband liked it so much he asked me to make it when his family comes to visit next month!

Sticky Chicken

I just made this using a "harvest chutney" from my local farmers' market, and boneless, skinless chicken thighs. My husband and I both LOVED it...this is finding a permanent spot in my recipe file! Tender, juicy, and flavorful...this is good enough to serve to company!
