Apricot Muffins

These would have been great if I followed the recipe exactly. I had about a 1/2 pint of blueberries to use up and I also toasted about a 1/2 cup of pecans to add to the muffins. Also just because I had it in my hand I added a teaspoon of vanilla to them. These are some of the best muffins I've ever had. I used muffin liners and sprayed those also...they won't stick to the liners and leave half the muffin behind. :) They also took about 22mins to bake. Everyone's oven is different. I never bake things as directed. I go under and add time if I have to. This way you can never mess up!!!

Green Beans with Bread Crumbs

This was so good, I just made a few changes to it. Once I put everything together I put them in a baking dish with extra cheese, bread crumbs, and pepper on top and baked it at 350 for about 8 to 10 mins. It might be a few less or more depending on the oven. The cheese was melted and oh so good give it a try. I also didn't use that much olive oil. I only used 2 Tablespoons and it turned out fine.

Hash Brown Casserole II

This was a very good recipe. I did make a few small changes to it. I used cream of celery soup, mexican blend cheese,a cubanelle pepper, potato chips for the top and added garlic powder to it also. I loved the way it turned out. There are so many things that you can do to this recipe, and it would be wonderful any way.

I had this for the first time in Dublin 12/07 and it was so good there I had to find a recipe to make it here. I changed/added a few things.I used 1/2 pound of kale, 1 cup of buttermilk and fresh garlic. Saute the kale,leeks,and garlic in the butter (add about a teaspoon or so of olive oil so butter doesn't burn)until soft and add to potatoes. I added the buttermilk right to the potato mixture. It was so good... thank you for the recipe it was great!!!

Whole-Wheat Chocolate Chip Cookies

These cookies were wonderful. My husband who does not eat that many sweets even thought they were some of the best cookies he had ever had. Everyone should give them a try.
