Great salmon - I use my Traeger grill because of how easy it is to control temperature - One of my favorite salmon recipes - also love to wrap salmon in swiss chard or kale inside foil & slow cook on grill

Eggplant and Goat Cheese Lasagna

We enjoyed this recipe - really needed to use some fresh eggplant that we had - my 8 yr old raved about it until he found out is was eggplant - then said he didn't like it - guess I shouldn't have told him - I am going to saute the epplant to soften the slices before adding to dish next time - we also added italian sausage as recommended by other reviewers

Thai Hot and Sour Soup

Family all enjoyed this soup - Very easy to make after getting a couple items(tom yom paste,lemongrass & straw mushrooms) from local Asian market - The tom yum paste is great - used twice the amount recipe called for & still added sirachi sauce at table since we all like spicy - also used extra mushrooms - was even better reheated

Beaker's Vegetable Barley Soup

Very good,healthy soup - entire family enjoyed it - Our 1st taste of barley in a soup & was a really nice option for rice - omitted the sugar,used kidney beans instead of garbanzo,chicken broth & added 3 seeded jalapeno peppers & a little tabasco

Very good soup and easy to make - Used the whole can of soup per other reviewer suggestions - added extra garlic - I used yellow bell pepper because that is what I had - will definitely make again

Cheesy Chicken Poblano Chowder

Excellenct soup - I would recommend using more poblanos for a spicier soup - also took a reviewers advice & added some taco seasoning - very good topped with tortilla chips & a little sour cream

Mexican Corn on the Cob (Elote)

Definitely will grill corn this way every time - I put the butter & mayo on before grilling - added spice mixture and then grilled - made a nice crust on the corn - big hit with everyone - the lime is a must at the end

Spinach Enchiladas

May be the best spinach enchiladas that I have ever had - I use fresh spinach - low fat sour cream & low fat cottage cheese instead of ricotta - use a slightly bigger casserole pan to not crowd the enchiladas as the finished in the oven - very good recipe!

I made this with turkey to be a little healthier - also took reviewers advice and used 2/3 cup ketchup with 1/3 cup bbq sauce - served on toasted wheat buns with swiss cheese - kids really liked this

We really like this recipe after following reviewers advice - doubled sauce - still is pretty minimal - used 1/2 chicken broth and 1/2 white wine - added diced mushrooms with capers - we love capers so added extra - kids really liked also - will definitely make again

Father-in-Law's Scallops with Sun-Dried Tomatoes and Bacon

This is a very good scallop recipe that even the kids loved. Definitely need to double the sauce. I added extra sun-dried tomatoes also. Did not use the olive oil - the bacon grease left from frying bacon was perfect for cooking the scallops. Will definitely make this again.

Juicy Roasted Chicken

this is now our favorite way to cook chicken - added garlic powder - 5lb bird takes apr 1 hour & 45 mins at 350 plus 30 minutes at 400 to crisp - recipe calls for celery & we add it - not sure what it does? we normally are very fond of the white meat,but this is so tender - leftovers make very good shredded chicken enchiladas

we had never had collared greens - these are so good - using a good smoked ham hock is very important - we simmer apr 8 hours to insure the greens are so tender & the flavor is right
