Grandma's Polish Perogies
Made these tonight and they were very, very good. My Polish grandmother used to make them and give them to me frozen, but sadly, I never got her recipe before she passed away. So, a recipe called "Grandma's Polish Perogies" was just what I wanted! We did some with mashed cheddar potatoes (I used instant mashed, making them a LOT less work!), and some just filled with cottage cheese. Here is our addition to the process: instead of freezing them and then boiling them,I made them up fresh and cooked them in a skillet with butter and onions. (This is how I used to cook the frozen ones I'd get from Grandma. My husband LOVES them this way and it worked out great.

Chicken Cordon Bleu I
This was fabulous - very easy and tasted great! We had purchased a ham steak for another dinner and then my husband asked if we could use it for cordon bleu instead. I tried to horizontally cut the steak into thinner slices, which "sort of" worked and made it a little harder to roll than deli slices would have been, so that meant we had a more robust combination of ham vs. chicken flavor and it was excellent.

Seafood Lasagna II
We used a little less onion, a couple cloves of garlic, substituted ricotta for the cottage cheese, substituted 1 can of cream of shrimp for the second can of soup, and used a little more basil. We used Italian-blend cheese for the top. The flavor was excellent, the noodles perfect... ours did not set up even after resting, so it was very liquid, but again it did not affect the flavor and didn't diminish our enjoyment.
