This recipe was very good although I did make some changes. I omitted the celery as per other reviews. I did not add potatoes. I diced, cooked and mashed the butternut squash ahead of time before adding to soup (I had mashed the butternut squash for another recipe so figured I'd use the same here since I had loads leftover). I used vegetable stock to keep it vegetarian. I added some curry powder and a clove of garlic. At the end I added some cream cheese and finished off with a sprinkle of cumin powder before serving.
