Aunt Mary's Eggplant Balls
I made these because my 10 year old is a vegetarian. I had tried these at a restaurant and like them. He loved them! My 15 year old son and I also liked them and I will make them again even though they took a while to make. I used two medium eggplants, added a bit of balsamic vinegar and Worcestershire sauce while cooking, and used a cup of Italian breadcrumbs and Egg Beaters instead of actual eggs. Yum!

Golden Sweet Cornbread
Wow, these are better than most corn muffins! I used buttermilk (vinegar in milk), a mix of butter and oil, and 1/2 cup sugar. They didn't rise as much as I thought they would, but the taste and texture and moistness were excellent.

Hash Brown Casserole II
My 3 kids and I ate this whole thing with our dinner tonight and they all said it was yummy. I used minced dried onion because I was lazy, and used fat free sour cream. I cooked for 45 minutes covered then turned the heat to 425 and uncovered for 15 minutes.
