Crispy Roasted Chicken

Mine didnt turn out really crispy but I really liked the spice mix and the meat was moist, if you don't plan on eating the skin make sure to rub some underneath the skin to get more flavor on the meat because it doesn't soak through much. I think im going to steal the spice mix for to make a similar rub for pork or something in my smoker bet it would go great with hickory.

Smoked Turkey

pretty much how i smoke a turkey, except i use an electric smoker and use hickory chunks. pretty fool proof, takes me more like 8 hours

Philly Cheese Steak Pizza

Very good, one of the best pizzas I've ever had (no kidding). I used smoked provolone cheese instead of mozzeralla, omitted the bullion, added sauteed mushrooms (which i strongly recommend), 4 cheese pizza sauce which had some zing, and used a pillsbury pizza dough in a tube rather than crescent rolls. I doubled up on the italian dressing too and sauteed it in with the veggies and beef

Scallops Mascarpone

Not bad, but kind of blah. Only change I made was that I used a lb of frozen broccoli instead of aspargus. Overall it just tasted bland, I think it would be better with a different kind of cheese, or maybe add cheddar or something swith a sharper taste (i dont know cheeses and have no idea if that would taste good or not so do it at your own risk)

Panna Cotta

Good stuff, though I changed the recipe quite a bit. I used half and half instead of heavy cream, and I add 1-2 tbsp of baking cocoa powder to give it a chocolate flavor (it settles out though, so the top 1/4 inch or so is brown and has a strong rich chocolatey flavor and the rest has a subtle flavor)

A bit on the bland side, I used 1lb of beef (I assume that is what the recipe is intended to make?). Might just be because it is missing the salt though which commerical mixes are loaded with. This is definetly a lot better for you.

Ginger Glazed Mahi Mahi

Awesome. One of the best marinades ive had. I made a few adjustments, i added about 30-50% less spices than the recepie called for because it seemed like a lot, and I added a few squirts of lemon juice and some cayenne pepper for some heat and let them marinade for 2-3 hours. I made a combo of mahimahi and tilapia, and baked them for 17-18mins at 400F, both came out great. Im probably going to try it on chicken sometime.

Chicken 'n' Biscuits

It was decent, nothing extremely special. I made several changes though, like adding garlic since people said the flavor was bland, used fresh aspargus (if you do that boil it first- I didnt and it was kinda crunchy) instead of frozen mixed vegetables, and I doubled up the soup (which i would recommend because it looked really dry before I added a second can) so I cant entirely judge it.

German Zwiebelkuchen (Onion Pie)

It was OK tasting, you cant eat much of it though because its so rich. I used Vadalia onions though and it might have been too sweet. if i make it again im cutting down on the sour cream, maybe subing some of the onion for potatos, and i might add some immitation crab meat for more flavor

Scalloped Oysters I

It was eatable but definetly not anything special. I used canned oysters, so that may not have helped. Way too rich for me as well, I felt sick after a few bites.
